Bible Study and Sourdough Y'all!!

good friday morning!!!          I woke up to a brrrrr, cold, chili, 20 degrees!!!!!!         yes, I did!!!!!        mr winter, get on outta here!!!         I'm sick and and tired of you !!!!!          go on, git on outta here, shoo, scat, get away!!!!        ok, now I got that outta my system.          hahahahaha          I'm ready to do some gardening though.        if you can get your hands in your soil, please leave them in the soil just a second or two longer just for me.           well, you guessed it, we're still shredding, but we've slowed down some.    I don't know when of if we'll get it all done, but we'll keep at it.         wednesday night I got sourdough bread starter going and I shared my process below.         at least as much of as I remembered to take pics of.        if you like sourdough, this may be for you.        I need to get in the kitchen today and get some real cooking done.         having been down in my back for almost 2 weeks and then shredding, it has put a hold on the good stuff coming from my kitchen.        hahahaha    well, I guess we'll get on with the rest of the post.

so, thurs morning I got up and made a quick batch of sourdough.        on wed night, I took out about a half cup of starter from my big jar.        I didn't want to feed the whole big batch of starter, so I took what I needed.         I put the starter in a the bowl that I always mix my bread in.         I fed it and covered it with a bowl cover and let that ferment over night.        when I got the starter fed, I got out a bowl and put all my dry ingredients in it and a measuring cup with my wet ingredients.          I covered it all with a floursack towel for the night.         when I got up thurs morning and took out a half cup of the freshly fed starter and put the rest back in the big starter container in the fridge.          I dumped in all my wet ingredients with the fed and fermented starter and then all my dry ingredients.         in less than 5 minutes I had that dough mixed and ready to let double in size.          that was at 7:05 thurs morning, then by 9:30 it had tripled in size and I worked it down and weighed the dough ball, divided that weight by 3 and  made my 3 mini loaves of sourdough bread.         I set those aside until they had doubled in size again.          for these little bread tins, I just let the bread reach the top of the pan and then I bake it and that's what I done this time.           by the time it rises to the top of the pan, it's doubled in size.        so, I popped them in the oven about 11:30 and baked them and Boom, just like that, sourdough bread.

making sourdough doesn't have to be complicated.          I get so sick of people with their rules and you have to do this and you have to do that.         NO, you don't have to.        don't over complicate anything, it takes the joy out of whatever you're doing.        figure out a way that works for you and just do it.       I had  someone  tell me that there's no way my haphazard way of slapping together a sourdough will ever work.           well, it does work and I'm not a slave to my sourdough.         it works when I need it, or it's outta my house.         and I'll assure you that anything I make is just as delicious as what everyone else makes that follows all the "rules".         stick to those rules and 3 or 4 days to making a batch of bread.    I'll make mine and be eating in way less than 24 hours.          I'm good with that.       


I wish I had gotten a pic of the amt of starter I left in this bowl.           I didn't measure it at all, I just eyeballed what a half cup would be and put the rest back in my big jar of starter.        then I mixed all the ingredients together and got the dough ball made and let it double in size, that's what in the pic.       


then I punched it down and weighed it and divided it equally among the loaf tins and made the 3 loaves.


it has risen for a little over two and half hours and it ready to go in the oven.


they are freshly baked and out of the oven and smelling mighty fine.


they are now out of the pans and sitting to cool off before I put them in a zip lock bag and on in the fridge.          oh yeah, and that's another pet peeve of mine.          people saying you can't store  bread in the fridge.        well, I'm not cutting anyone any slack or giving grace on this one because I've been storing my bread in the fridge when I decided I no longer wanted throw away my homemade bread because it got stale.        "they" say you can't store bread in the fridge.        that's a LIE!!!!!         I've been doing it for about 40 years now and guess how much bread I've thrown away.         go ahead and guess.    zilch, nada, none, not one single slice!!!!         so the next idiot that tells you, you can't store your bread in the fridge, tell them to tell it to someone who wants to hear them yap their traps.       this is where I said I'm not cutting anyone any slack or giving anyone grace on this one.        stupid is as stupid does.     this is one woman that ain't stupid when it comes to the bread she makes, and most other things she does in the kitchen!!!           so, you do what you want to do, but you have been told by someone who has been doing it this way for 40 years and then some!!!         try it for yourself sometime.

picking up with Isaiah 54,           do you want a powerful message of Gods unwavering love for His people and His church, well, this is it.         trust in God even in the hard times.          it's easy to trust God when everything is going well, but during the hardships is when the rubber meets the road.      trust God  for His peace and protection.         has God ever abandoned you?         no He hasn't and He's not about to.         what about this, no weapon formed against you will prosper!!!!        whether it's the weapon of someone speaking against you or someone using a physical weapon on you.        we can rely on God's promises  and trust His protection.

Isaiah 55,          how much does the mercy, grace and forgiveness of God cost?          absolutely nothing!!!!!!!          it's been paid for graciously by the shed blood of the Suffering Servant!!!        we have to repent.        God promises us eternal prosperity!!!!!         we may not have 2 pennies to rub together in this life, but we have eternal prosperity and security.       this life is fleeting, eternity is forever.         repentance and obedience is the key to eternal prosperity.        God's word is powerful, because God is powerful. 

Isaiah 56,             we can see the rewards for being obedient to God.         if you feel like an outcast, you're in good company.          because a lot of God's people feel like outcasts.        if you don't support all the perverted ideas of today, you're an outcast.         most churches today have a perverted ideology of who God is.        if you are any kind of leader in your church and you're spreading filth and not clinging to the true word of God, you are in grave danger.        anyone who perverts the word of God, risks the wrath of God.

Isaiah 57,             at some point in time, idolatry and evil and wicked leaders that push the filth will be rebuked!!!          it can't happen soon enough.         when did foul language become the norm in every day conversation.        men and women dropping curse bombs just in normal conversation.        that's just evil and wicked and what's worse, the more we hear it, the easier it gets to take part in some of that stuff!!!           that's where we have to keep searching after the heart of God in all things.        it's not just foul language, but adultery and every form of sexual sin and all things that goes against the moral compass of God.          there is no peace for the wicked.        those are God's words.

Isaiah 58,            God is calling for true worship from His people.         do you know what true worship is?         I can tell you that it's not singing some of the songs that's sung in churches today for the soul purpose of  looking  like a rock concert with songs that are not meaningful in any way to a real christian.           too many churches have shut their doors to Christ and He's not even welcome.         they either don't know or don't care.         and if you're a true christian, in one of these churches, it's up to you to leave that church as fast as your feet can carry.      how can you be seeking after the heart of God if you have no idea what He's about in the first place.       I hope that as you're going thru these scriptures that you're learning just how incredible our God is and He deserves to be worshiped  and held in high esteem and praised with our words and actions and thoughts.      what are some of the things that God wants from us as true followers?      break the yoke of slavery to sin, share food with the hungry, clothe the naked,  not neglecting the needs of others.        these are just some of the things that seeking after the heart of God will look like.

I pray that what ever we do today, we keep seeking after the heart of God.          that has turned into my theme for the year and I think its a pretty good one.        at one point yesterday, I got upset about something, really upset, physical pain can help one reach their breaking point and I realize that's not an excuse.        so when I got upset and got over it, I realized that there was no seeking after the heart of God in that moment.         it broke my heart.        so, that's just how easy it is to take our focus off the right and holy, and go quickly to unholy and blasphemous behavior.         I've said this a time or two in a fun  manner  about other  stuff, "do  as I say, not as I do".        for  this, I'll just say, "do better than I did."        I never want to not be seeking after the heart of God, even in my own home.        blessings of  eternal prosperity and eternal security be ours.

Bible Study and 3 mini loaves of Sourdough Bread

good morning my friends.          I hope hope you had a warm and cozy night last night.        it was really cool for us here in my neck of the woods.         on thursday the high was 73 on friday the high was 49.    that's a significant difference, and we felt it.        well, if you do like the weather, just wait a few minutes and it'll change.          so, today, saturday, they're calling for in the 70's again although it has started off pretty chilly.          the worst thing about the drastic temp changes is that everyone is getting sick.      I pray that hubby and I can stay healthy.        we got out and got our walk in this morning and ready to get our day started y'all.      let's see what we can get into, as long as it's something good.         sounds like a plan, let's make it a good day y'all.

ok, so let's do a "2 minutes......................" this morning.            I finally got some more sourdough bread made and just in time too.         we love the panini sandwiches I make every once in a while.          I pull my starter out of the fridge and let it come to room temp.         then I feed it and let it rise and fall.      next I take out what I need for my bread  and get my dough made just before bed time.        I cover it up on the counter and let it set there overnight and the next morning, I punch it down, weigh it and divide it into 3 equal parts. 


I get those balls of dough into my 3 x 5 inch bread pans lined with parchment and let it rise to the point of doubling in size and the bake at 350 degrees till they are done.          simply delicious.


I make 3 loaves, 2 for us and 1 for my Momma.           she loves it too.          I love to keep it in the fridge, ready to make sandwiches.         it's also wonderful for my version of french toast.        next time I make that, I'll try to remember to share it.         I hope if you haven't tried sourdough bread that you'll give it a try.        a lot of the online groups make it out to be harder than it really is.         if I had to follow all the rules they say there are to making sourdough, I wouldn't touch it with a 10 foot pole.      but it's  actually quite  easy.       I've been  making it  for over 40  years, the same way I'e always made it.       it just takes time.         and that my friend, is what life consists of, is time.    making sourdough is capturing  and using  the natural  yeast in  your kitchen  environment  is a  slow  process, that takes time.       so, if you want to try it, don't hesitate to leave me a comment and then we'll go from there.        my process  won't be  right according to a lot of sourdough snobs, but my pictures speak for themselves.         they look pretty nice to me.         anyway, go make some sourdough bread y'all.

picking up in 2 Kings Chapter 13, we see the kings are still doing evil in the sight of the Lord.       Elisha died and he was buried and in haste when burying someone else, they threw his body on top of Elisha's bones and the man revived and stood up.       God's power is what brought the man back to life.        this miracle showed that God has power over life and death.         God allowed Elisha to preach one last sermon.        Elisha served God in a wonder working way.       God is a mighty God and He worked thru Elisha.         so God gave Elisha one last miracle even in the grave.       what an honor it was for God to work a miracle thru the "lovely" bones of Elisha.      

why was it so hard for the kings to get rid of the high places?         they still sacrificed and burned incense in the high places.         they keep following all the customs of the other nations instead of worshiping the One True God!!        they done things in secret against God, but God knew it.       they served idols, and they done all manner of evil things provoking the anger of God.         the Lord kept warning Israel and Judah to turn from their wicked behavior.         they rejected God and served idols and they themselves became empty and followed the other nations around them.     

finally Hezekiah comes on the scene, and he becomes king.         he walked with God and done what was right in the eyes of God.       he tore down all the high places and all the alters where they burned incense, he got rid of all the idols.          Hezekiah trusted in the God of Israel.         he clung to the Lord and followed all His commandments which the Lord had commanded Moses.        whatever Hezekiah done, God blessed him, he was successful.       but he became prideful.        pride gets in the way with a lot of us.        we see how God is working and we become prideful.       Hezekiah's pride got in the way.

when someone sees us and recognizes us, do acknowledge all that we are is because of great and merciful God, or do we take accolades and get a big head and rest on our own laurels.       sometimes it's nice to hear a good word or two, but then if we're tempted to be prideful about it, it would be better for us to never have heard a good word.         I have learned that if there is anything good in me at all, it is only because of Jesus Christ.        there is nothing in me, apart from Christ, that is good.        I'm just a heaping pile of dust.       I hope and pray that I can always remember that if there is anything good in me, it's strictly and only because of Jesus Christ.

Bible Study and panini sandwiches

good morning wonderful people.         it's a nice and cool 46 degrees here in my neck of the woods.      I was hoping for a little warmer temps, but I think it's supposed to warm back up around Saturday.       we'll have to wait and see about that.         we do have more rain in the forecast, but rain is better than snow.         hahaha          I just want a little more sunshine again.          I did get both of my hydroponic units planted day before yesterday.          one of them has pepper seeds in it and the other one has tomato seeds in it.          I also got 4 medium sized pots planted with carrots, beets, parsnips, and radishes day before yesterday too.        I'll hit the tops of them with a spritz of water today.        if it does get to the 70's on saturday, I may plant some lettuce seeds in one of my covered raised beds on legs.       I hope to get some of that done.         anyway, we'll see how the Lord blesses with good weather and good use of time.        I've got to get in the kitchen in a little bit and get some potaotes peeled, russets and sweet potatoes, cut and baked and then in the freezer for easy meal prep.       it's always a good day when I'm prepping good food for us.

so this will be a pretty long "2 minutes in the kitchen with me".           for once, I remembered to have my cell phone and snapped away during the process.          so this is my cuisinart griddler.         the [lates will flip over and make a flat griddle surface.         


this is one of my loaves of homemade sourdough.          I love the size of the loaves, they're perfect for this.  
as much as I enjoy this piece of machinery, I don't enjoy cleaning it all the time.          it's not hard to clean, I just don't enjoy having to clean it after each use.          I know, lazy right.        hahaha           so I dug out a piece of parchment paper on a whim, just to see if it would work.      


I got my  bread spread  on the sides that will touch the griddle with mayonnaise to help the bread brown evenly.             I also got my lunch meat and cheese prepared too.

once the griddler got hot, I put everything on it, in proper order and shut the lid and guess what?        it worked better than I could have imagined  it to work.


the folded in half parchment worked perfectly to cover the top of the sandwiches too.          I lowered the lid and let it do it's magic.

here it is, with the lid closed and you can see the parchment paper over the edge and it's just doing it's thing.

here they are finished and you can see the oozing of the cheese, but that's ok, because there's still plenty on the sandwiches.


and the last picture is how I slice them.             I do this about once a week and we do love them.       it's a really great change of pace for us.


I guess I could have shown you our empty plates.          hahahaha           they were really good and they hit the spot when you want something different.           and one of the best things about this, easy cleanup!!!!!           I'm all over that and I sure do appreciate the fact that it's so easy.         now, I don't have to take the plates and soak them in the sink.          I just wad the parchment paper up and toss in the garbage.          done and done.          yay!!!!!!!         I hope you enjoyed seeing this and that maybe you got some ideas.

picking  up in 1 Kings Chapter 12, we  remember  Solomon  is dead and  his son, is next in  line as king.         sometimes it best to take some good advice, especially from people that can say "been there, done that".          Rehoboam was king over Judah and he wasn't one to take advice of the elders.         

he took advice from the young people.        just like people today want to take advice from young people that haven't even gotten out of pampers yet.       but people that don't want to serve the Lord will do anything.        we see that when people out picketing for the right to kill babies.         they don't want to responsible human beings, they want to do what they want to do and have no consequences to deal with.       having forgotten that they will answer to God someday for it.

Jeroboam also became ruler over Israel and he sinned greatly against God.     not only did Jeroboam make 1 golden calf to be worshiped, but he made 2.        they knew about the golden calf that Aaron had made and now this king makes 2.       and the people did sin and worship it and not only that, but came up with his own feasts and he appointed priests.        he sinned greatly in Gods eyes.

it matters not, who is king, they all sinned and sinned greatly.          up to this point anyway.         it just shows me that it's human nature for people to evil and wicked.         for me, even as a Christian, I have to fight hard, with the help of the Lord, to keep the old ways and thoughts from taking over completely, so I can't imagine having the weight of king on my shoulders.        the position of king for Israel was a God ordained, appointed position.         God had told them early on, back in Genesis, that one day they would demand a king, just like all the pagan countries around them.          we can see why God wanted to be their king.       as a Christian, Jesus Christ is my King.        is He yours?   

battles against kings and wars keep going on.          but in Chapter 17 we see Elijah, a man of God, a prophet who believes in the power of God.        praise God for men like Elijah.       God gives us hope, even today, in a hopeless situation.        God will always have someone as His spokes person.        we have to have the ears to hear and the heart and mind to know the truth.        I've heard a lot of preachers telling what they want to tell.        but what they're telling is nowhere to be found in scripture.         if someone is telling you something and it can't be found in scripture, they are a false teacher and they are NOT to be believed, trusted, listened to in any way.         the preachers preaching the true word of God, won't be really popular with the message they have.        but truth isn't popular.        we live in a culture  that doesn't have the mind or the capability to recognize truth when and if they hear it.        most would rather believe the lies than to believe the truth any day.        

ask God for discernment and wisdom.        those are 2 gifts that God is eager to give to us.        those 2 gifts can mean the difference in where we spend eternity.         that's how important they are.

Bible Study and baked sourdough bread

good frigid bitter cold morning y'all!!!!!   it was a mild and meek 3 degrees this morning when I got up, yup it was.         it's just now up to the hot temp of 8 degrees.        this is the temps we'll be having for a few days.         am I happy?         not hardly!!        hahahaha          but I will trust God thru this and keep looking forward to spring.          that's my plan.        I hope and pray that where ever y'all are that you're staying warm and snug and that you have plenty of warming foods to eat.         soups are especially good for times like this.         anything that will warm you from the inside out is good.        lots of hot tea and coffee and hot chocolate, stuff like that.         just stay warm and stay inside if possible.       check on your neighbors, especially if you have any elderly neighbors.        enjoy the sunshine today.        it may be cold, but sunshine is just plain good for the soul.       I hope we all have a great day today and that we remember to thank God for it.       you know what, if you garden, then you know that cold weather is a necessity for a garden to do well.         one of the things it does, is kill some of last years critters that is hibernating in the soil.        so there won't be as many garden eating insects.        there will still be plenty, just not as much as  there would  have been had  we not had  some extreme freezing weather for a while.      so that's a benefit.        I just hope it doesn't kill my garlic and onions that are growing.        that won't be a benefit.       at this point, it's in God's hands, so we'll see what happens.

well, let's do it, another "2 minutes in the kitchen with me".             it's getting familiar isn't it, but that's ok.       I'm trying to remember to take pics too, so it's all good.


this was my risen, proofed dough from the other day, when I shared that I had fed my starter and was going to make some bread.          I wish I had remembered to get a pic of the dough ball when I first got it made and have to compare to the risen dough in the bowl.         I let it sit out all night on the counter to proof and ferment.        it was probably a 12 hour rise or more.


when I got the dough punched down and worked up real good, I weighed the dough ball and divided that by 3 and got my my mini loaves made and into the mini pans lined with parchment.


I forgot to take a pic just before they went into the oven, but this is them fresh from the oven and cooling off before I put them in the fridge. 


this is a sampling of what I love to do with these mini loaves of bread.          I can get 6 good slices and make 3 sandwiches on my Cuisinart griddler grill.        it's a nice griddle/grill and it makes these sandwiches so perfectly and we love these sandwiches. 

I brush the outside of the bread with mayo and put the chicken or turkey lunchmeat inside with a piece of real cheese and put the top slice of bread on.        the little dab of mayo brushed on the outside of the bread really helps it to get a fantastic color and you do not taste mayo at all.      

these mini loaves of bread are perfect.        if you love sourdough, I encourage you to try making it yourself.          it's easier than you think, if you've never made it before.         let this year be the year you stopped buying bread at the store and make your own.        you can do it!!!

one thing I can say is that a lot of people make more out of making sourdough than it should be.         it blows my mind.         yes, it takes time to get a good strong starter, yes it takes time for it to rise, but that's really not an issue.       if you start it at the right time, you won't be inconvenienced.       I feed mine early of the morning after I've taken if from the fridge and let it come to room temp.         I make my dough at night to let it ferment all night.        then I make my loaves early in the morning and let those rise till they are almost double in size and then I bake them and most of the time have them out of the oven before lunch.       I guess it's all in how you look at it.

today we're picking up at Numbers Chapter 26.        after the latest plague, they are commanded to take a census of the men able to go to war.        the land was to be divided up by the size of the families.       with the census came new laws of inheritance that included the women with no brothers.       they would also be included in the inheritance.        for me, this is where I see that women are included in the fact that Christ died on the cross all, not just men.       Christ didn't treat women like second class citizens.        with Christ, there has never been a good old boy system.       Praise God!!!!!        the foot of the cross is equal, level ground for all of us.        right here at the end of chapter 27 is when Joshua is to take the place of Moses.        Moses won't be going into the promised land, so Joshua will be the new leader.       

chapter 28 is more laws about offerings.         the Lord also reminds them to remember the Lord's Passover and also the Feast of First Fruits.      they are to keep and remember the appointed times set apart by the Lord Himself.   

one thing I can is that God takes obedience from His followers seriously.        so should we.        He takes it so seriously, that He sent His people out to war against the people that had caused the Israelites to sin against God.        they were willing enough to sin, just like we are willing enough to sin today.      in all honesty, it doesn't take much to get us to sin.        but it's a whole lot easier when we are running with the wrong crowd.          and God had told His people to stay away from the people that was worshiping foreign gods.        now, God was exacting revenge on the people who worshiped foreign gods.

the Lord had told the Israelites to drive out the inhabitants of the land that God was giving them, and if they don't drive the inhabitants out of the land, then they will become as thorns in their eyes.       I think all these thousands of years later, we're still seeing some of those thorns in the eyes of people.       people have chosen to not get along.   they have chosen to hate and kill and destroy.        they have chosen to worship the foreign gods.        and we're still doing the same things today.

we see how God told them to divvy up the land of Canaan.        what I think about, this side of the cross of Christ, is how we are all equal at the foot of the cross.        we see cities of refuge talked about.    those cities were for people who done something bad, but not on purpose.        they were to have some place of safety to go and live out the remainder of their lives.        today, in this country, there are cities of refuge for the criminals and illegals swarming across the border to become wards of the state.      God surely never meant for that to happen.       as a matter of fact, if we look closely, in what we've already read so far, we would see that the death penalty was called for in most of these cases.       and  I just have to interject  right here, that it might be a good idea to bring back the hangings on the court house square.        no, that probably doesn't sound very christian like, but it would stop a lot of the wicked, evil, heinous things that we see on a regular basis that has desensitized us to sin.      when we finished chapter 36, we see this is the commandments and ordinances that God commanded His people to keep.

next we start in Deuteronomy Chapter 1.

well, this is about it for today.        I pray that if your in the arctic tundra like I am, that you can stay warm.         I pray that we can figure out how to worship of Lord and God in a way that's pleasing to Him.         if we're ever in doubt, Numbers would be a good Book to go back to.        I pray that we can trust God in all things, small and large.         He is ever faithful.       just know that He always has our best interests at heart and He'll always do the right thing.

Bible Study and stuffed salmon

good morning my sweet friends.          I pray all is well in your world today.         so far, it seems pretty quiet in my neck of the woods.          it's not as cold this morning as it was yesterday morning and I'm happy about that.        I have sourdough on the counter proofing and later I'll get the loaves made and let them rise and bake them.          the only reason I mention that is because I can smell the rising dough from where I'm sitting and my husband can too.         he mentioned it earlier and said that he smells something that will be delicious.        and it will be.       we have an errand to run today so I'm trying to get everything done that I can and then when we get back, I can get right to making my mini loaves of bread.         if I can remember, I'll share pics of my bread.

so I made the weekly trip to aldi yesterday and I got something I have never gotten before.        but I can say emphatically, that I will be getting this again!!!           we both enjoyed it so much and it was a very nice meal in the comfort of my own home, which I also love!!! 

a couple of weeks ago as I was walking thru the store and found my way to the fresh meat dept, I walked by the fresh salmon slabs to check the prices.         a lady was standing there and she looked around and she asked if I had ever tried the stuffed salmon.          I told her that I had not, just because it was plain, with no seasoning, and I didn't want to mess up the stuffing by putting something on it.

she said, oh you can brush or sprinkle on any seasoning you like and just keep it off the stuffing.       I said, well why hadn't I thought of that?         I had a lot of groceries already, so I made a mental note and finished up and left.       so for the last 2 weeks I've thought about that.

so when I went yesterday, I didn't have a huge amt of groceries to get, so I picked up a pkg of the stuffed salmon.           when supper rolled around, I done as the instruction said and put it in the preheated 375 degree oven for 20 minutes and I used the air fryer to toast up our potatoes bites.         hubby had russet potato bites seasoned with onion and garlic.        I had sweet potatoes seasoned with onion and garlic.     I make these from scratch and keep them in the fridge ready to blasted in the air fryer.     delicious!!!

when I got supper ready, not only was it beautiful, but wowzers, it was delicious!!!!!!!         I can tell you for sure that these will be on my weekly grocery list from now on.         we both just absolutely enjoyed them so much!!          I'm sorry that I didn't take a picture of them, but I will next time.        so I went to the website and took a couple of pics and thought I'd share them so you'll know what to look for.          run, don't walk, to your nearest aldi.         just don't go to mine and buy it all out!!!         I'll hunt you down!!!!         hahahahaha         naw, I was just kidding about that, but don't buy them all out, let others see how wonderful they are.       hahaha

while it worked really well in the oven, I'll be trying it in the air fryer next time.         

if you like salmon, this is for you.        I really wish I had some for lunch today.        hahaha           but I will go to getting this when I don't have a huge grocery bill and put a pkg in the freezer along.        I can't wait to have it again.        and I may even try to figure out a stuffing mix to make my own.

picking back up at Leviticus Chapter 18,  we are still looking at the laws that God is giving His people to live moral lives and not live the way the Egyptians did.         God wanted His people to be set apart and live lives based on the commitment they had made to Him.           sexually pure lives are hard to come by these days, we see it at every turn, with every ad, on every tv program.         immorality at it's best and God expects His people to live lives differently.         the question is; do we?          I don't think so and it shows in the number of broken families, in the number of people that think homosexuality is fine,  homosexuality praised and pushed in many churches and many other ways.          the church should look different than the world, but it doesn't.  a worldly church is a church without Christ and a worldly christian is a lost christian, doomed for hell.

Chapter 19 has a peculiar verse in it.  verse 31.      look at that verse.        do you check out your horoscope when you get the chance to?         I used to also.        not any more, since I read that verse about 20 to 25 years ago.         we defile ourselves by doing that.        ouija boards, reading tea leaves, tarot cards and the like have no place in the life of Christian.          doing these things is considered prostitution.          God actually said that people doing these things are to be put to death in chapter 20. 

Chapter 20 speaks on human sacrifice.          that's a big one for us.         abortion is human sacrifice to cover up the fact that people want to sin, people love to sin, people are addicted to sin and they will easily kill a child because of that sin.         since the 1970's there have been multiple millions of baby's killed, ripped right from the womb.         drs, nurses, women, men; all who have played and are still playing their roles in this atrocity will be held accountable for it.         and I believe that this country is being held accountable for some of it now.         if you can't stop your addiction of having illicit sex with anything that moves, at least go to one of the quacks that does the abortions and get your tubes tied.    at least you won't be murdering babies.   

Chapter 23 speak of the Holy Days that they are to remember.          each appointed time has a significant meaning for the Israelites and they are to remember those appointed times.        now, for us as Christians, what do remember to keep holy, the easter bunny, santa clause and spooks and goblins.       isn't that a shame that right here in our bibles we have the days that are to be remembered.         fast forward to Jesus.          what are the holy days He celebrated and remembered?        the ones mentioned right here in verse 23.

Chapter 24 is more laws and if you ever wondered where "an eye for an eye, a tooth for tooth" came from, right here is where that came from.       and cursing God and taking His name in vain, right in this chapter tells what to do with one who does that.        people say anything and get away with it.        well, maybe they don't, because there is a hell.         that's about it for today.

well, I guess I'll sign off here for the time being.          I hope and pray that when we sit down with God's word that we ask Him to show us what He wants us to see.        if we do that, we'll always see the things in His word that will help us live lives that are pleasing to Him.         we can't do that without Him in our lives.         He has to be the driving force behind everything we do, otherwise, it's all useless and a waste of our time.          let's keep Christ at the forefront of all we do and ask Him to help us see the world thru His eyes.         be ready to have your heart broken too, when we ask to see what He sees.         it's not a pretty place we live in.         lots of evil wicked people and it should break our hearts.

Sharing what I have learned - Sourdough bread from scratch - Part 1

Good morning lovely friends!!!!       I hope and pray that this finds you all doing hunkey dorey for a cold wet day in the south.       it's not the coldest day we've had, but it's still a little chilly right now.    earlier, we actually had lots of rain.       I'm happy that's all we had.      in some places across the US they've had snow and  have been measuring snow by the feet and not the typical inches.        that's pretty scary.         so I'll happily take some rain.          but I do lift all the ones affected by the heavy rain and snowfall in prayer.         it can be so devastating when roofs start collapsing and power lines come down due to trees falling and all that comes with that.        so I just pray that God will take care of them all and that people will help others, like we've seen happening in North Carolina since day one of the devastation of Helene.         God bless all those that helped and those that continue to help.        I continue to hold those all in my prayers also.    

this blog post was started on 12/13/24.        so I've come back to it several times.         it may be a never ending post.        you may have to try to decipher what I'm trying to get at.         I have so much stuff swirling around in my head about sourdough.         I'm definitely not a professional bread maker, but I've learned a lot over the years and this is what I'm trying to share.         my tried and true lessons for me.    that's all.         this may not be what works for you, but it works for me.        so as I come back to this, I'll start trying to remember to date it.       not that it will make any difference, but it may help me in  keeping track  with what I share.          I don't know.   

I've been thinking about the state of my blog.       hahaha         I want to get back to it regularly, but I just can't seem to get motivated.         so what I thought I would try to do is just share some of the stuff that I have learned over the years.       as I was walking this morning and praying, my blog was at the forefront of my mind.         I've always shared about some of the things that I've done and I enjoy that.    I'm not a teacher, but I try to share what little I know and so far, it's been sporadic at best and all over the place.    hahaha          so I thought I would try to harness my thoughts on a few subjects.          we'll see how that goes.            I'm already struggling with it.        hahaha

for this blog post, I want to talk about sourdough bread from scratch.       I had been wanting to get a good sourdough starter going again and I finally just went for it.       I have always loved making sourdough, but I have always hated the waste that comes from feeding and discarding.        so I finally found a recipe that calls for starting out with small amts and doubling the amt each day till you have about a pint or a little more.

one of things that I'll stress right off the bat, is to use a digital scale and weigh all you ingredients in GRAMS.       you'll be surprised at how different the weights are in grams as opposed to a half cup of something.        just for fun, take a measuring cup and measure out a half cup of water and then a half cup of flour.        find 2 containers that you can set on you scale, one at a time and zero out the weight of the container and pour in the half cup of water.      water will always weigh the same.        make a notation of what that half cup of water weights in grams and set is aside.          next take another container and set it on the digital scale and zero out the weight of the container and put that half cup of flour in that container and make a notation of the weight in grams of the half cup of flour.         now compare the weights in grams of both the flour and water.       sometimes the looks of the amt of flour to water ratio can look to be off.         they are not the same weight when measured in standard cup or 1/2 cup measures.        remember this little experiment when getting your supplies together to make a sourdough starter.   but, when measuring in grams, when a recipe calls for 50 grams of flour and 50 grams of water, a gram is a gram is a gram, and the weight is the same.

measuring in grams will take into account that on humid days, flour may weigh more than it does on less humid days.           and just for fun, I took my measuring cup and scooped out 3 different 1/2 cup measures of flour and weighed them in grams and there was a significant difference between the 3, 1/2 cup measures of flour.           weighing the flour in grams, what ever your measure is, you get that every single time.           and just to prove that humidity affects the weight of flour, take a half cup of flour and weigh it in grams.          make a notation of that weight and then leave it sitting out all night on the counter, covered with a towel.         weigh it again the next morning.        depending on if it's humid or dry, the weight of the flour in grams will probably have changed.           and it could be a significant change.         if there is a change in the weight of the flour, then take out or add to, what ever is necessary to bring it back to what ever your starting grams was.

that's why it's important to weigh in grams.         if the weight has gone up or down due to humidity or lack of humidity, then the water amount will be off.       but, weighing in grams will account for any humidity change in the flour.          so weigh that same flour in grams again and take out or add more flour, based on the weight in grams.          that's where we get into a lot of trouble with our dough.           we'll start adding more water or more flour and the first thing you know, the texture of the dough is thrown way off.        that's definitely something that we can have problems with.        it will affect the overall texture and taste of the finished product. 

this is probably the most important paragraph so far.       having done these experiments and proving to myself what can actually happen, I now look for starters that have everything measured in grams.          it can be a pain at times, but it does work out so much better.          you don't even have to think about the humidity in your home affecting the flour, because it will already be part of the overall weight of the flour.         you don't have to worry about that because it's compensated for.           where if you measure a half cup of flour, you may need more flour or you may need less flour.          measuring  in grams, whatever can affect the weight of the flour is instantly being compensated for in the "grams" measurement.         I hope this makes a little sense.          hopefully everything in bold cleared up anything that could have been confusing.

remember one thing, if nothing else: a gram is a gram is a gram.    weighing in grams will be precise.      measuring in standard measuring cups is not precise.          you can take 3 people and each measure a cup of flour.        doing all the things we're supposed to do.        fluff the flour, spoon it into the measuring cup and rake and excess off with a knife.         3 people doing the exact same way, and you'll still 3 weights in grams if you take the time to measure in grams.          try it.         that's where the proof is at.       well, now that I have sufficiently confused............hahaha.           I hope that I can stay on track and get down in text that will eventually make sense.         I said earlier, I'm not a teacher and this is proving that point.          I just love to share what I know form my own experience.      

so for now, this should bring us up to making a starter.           it may take a while for you to get a good strong flavorful sourdough starter.          it won't happen over night.         but once you get a good starter going and keep it going, you should have any problem after that.         most starters require feeding daily and removing up to half of the starter daily, know as "discard".           I'm frugal.        not cheap, but frugal.     there's a difference.          with that difference comes the fact that I can't stand waste.        so for the last couple of years I've been searching for the elusive perfect no waste sourdough starter.

I think I've found it.         it's a starter that you have to weigh out in grams every day.       you essentially double the amt of flour and water daily.         it will take a few days to see bubble action, but it will happen.         you stay on top of it daily.          start it in pretty good sized container.         I prefer a container that has straight sides and that will hold about a quart.         I also sit that container in a shallow dish to catch any overflows.          because that will eventually happen.          a loose fitting lid just laid on top of the container so it can breathe, a coffee filter, or a piece of cloth laid over the top is what's required.           the sourdough has to be able to breathe and pick up natural yeast in the environment.          that's what actually makes the "sourdough" is the natural yeast coming from your environment.       at some point in time, there will lots of natural sourdough yeast spores in your kitchen environment.          the house we lived at before the one we live in now, I had made and baked sourdough bead for years.          we built the house from the dirt up, so I was the one that got the sourdough yeast established.          24 years later, I wonder if any sourdough has been made in that house since.        but once you get the sourdough yeast established, it's pretty easy to start another starter from scratch.          but if you've not ever baked sourdough and you're working on a new starter, it can be challenging at best.         

I just started my recent foray into sourdough again on Dec 1, 2024.          so I'm still working on getting a good sourdough starter established.           I have made english muffins, put some in my cornbread wedges and I baked 3 small loaves of bread the other day and all of those turned out really well.        there's just not enough sour to it yet.       they are really good, just not with the sour note yet.      so I keep adding to my starter every day.         I feel like it's getting stronger too.

in the process of adding to my starter every day, I'm taking out some of it every day.        I'm dehydrating about 100 grams daily.         I take my solid dehydrating tray from one of my dehydrators and cover it with starter and spread it out really thin and pop it in the oven with just the light bulb on.    believe it or not, that's enough heat to dehydrate a tray of starter.          I'll dehydrate it till it's crispy and break it up into pieces and put it in a jar with a good lid that will seal good.        I'll be able to use that if I need to jump start a starter one of these days.          I can just rehydrate about 15 grams with 15 grams of water and add to the beginning of a new starter and it should jumpstart it.          if I want to, I could just rehydrate the same 15 grams of dehydrated starter and add that to a cornbread mix, a pancake mix or just whatever I want to add it to.        it should give a little bit of a sourdough taste.         I'm anxious to find that out.

so if you're interested in trying your hand at starting a "no waste sourdough starter", here it is.         pick a day and start.           get a good sized clean jar.       (I prefer a straight sided jar, it's easier to get it all mixed in.          try not to use metal to mix it with.         try not to use regular tap water, because the chemicals in it can inhibit the formation of sourdough yeast.         I always prefer an all purpose, unbleached flour.         I use the least expensive I can find.        I have found that one works as well as the other.         and I get what's the easiest on our food budget.        with all that behind us, now on to the recipe:

day 1: 5 grams of water and 5 grams of flour, mix well

day 2: 10 grams of water and 10 grams of flour.  mix water in first and get that mixed and then add flour.

day 3: 20 grams of water and 20 grams of flour.  mix water in first and then add flour.

day 4: 40 grams of water and 40 grams of flour.  mix water in first and then add flour.

day 5: 80 grams of water and 80 grams of flour.  mix water in first and then add flour.

day 6: 160 grams of water and 160 grams of flour.  mix water in first and then add flour.

day 7: take out the amt of starter the recipe calls for.      I always measure that in grams and make a notation of the weight that I took out on the side of the jar.        then follow the instructions to make your bread.     

this is the perfect "no waste starter".         this is the only starter I'll ever use from now on.        unless I go back to my original starter from about 40 years ago.        if I ever go back to that one, I'll shart it with y'all too.          for now, we'll concentrate on this recipe.    

at some point in time, around day 3 or 4 you should see bubbles start.        take out what you want to use and  either put it in the fridge or feed it again.         if you put it in the fridge, then take it out and let it come to room temp before you attempt feeding it.         it needs to wake up.          give it a few hours.      I like to get mine scheduled where I'll get it woke up and then before bed time, I'll feed it.        look at the number that you should have written on the side of the jar.         the weight in grams of what you took out to use.        if you took out, hypothetically 150 grams of starter, then you'll want to feed it with 75 grams of water and 75 grams of flour.           stir the water in first and then stir the flour in.        cover it loosely and sit it in a tray to catch any overflow.          at some point in time, the starter will actually start bubbling to the point of overflowing and that's an awesome thing!!          you just want to have something on the counter to catch it.         hahaha          it's a mess otherwise.        another lesson learned.        

so, now you've taken out a portion of starter to make a sourdough bread loaf.       and again, I like to get this going close to bed time so it can rise all night.        the first rise is a long rise.     the starter has got ferment in the dough that you've just made.         so, once again, weigh the water and flour, in grams, for the bread recipe just like you've been doing ever since you started making the sourdough starter.         get all the ingredients mixed up really well in a big bowl till you have a nice looking dough ball.        the dough will be semi sticky and a little loose.          grease the sides of the bowl with oil so the dough doesn't stick.          also roll the dough around in the  oil so the top of the dough doesn't dry out.   cover the dough with a cloth and leave it out on the counter all night for the dough to ferment.       the next morning, punch the dough down and work it up pretty good.         divide it into bread pans or make one loaf, what ever the recipe calls for.          get the dough shaped good and in the pans you're going it in.     cover it again with the towel and until it has doubled in size or more.         for me, I give it about  4 or 5 hours and then I bake it.        put it in a preheated 350* oven for about 25 to 35 minutes depending on your oven.          it may take you more time or less time.        just watch it, till you get the color crust you want.         

if you done this, you should be smelling and looking at some amazing sourdough bread.        congratulations!!!!!

I think I'm going to end this blog post right here.          my brain is about fried.        hahaha        which it doesn't take much to do that.        I've just about thought about sourdough all I can for now.         but I hope to come back to it and address it again in a part 2.        we'll see when that happens.        I may post some pictures when I and if I do a part 2.

Dehydrated Watermelon and Sourdough Starter

Good morning blessed friends.       It is kinda soggy here in my neck of the woods today and that's ok.    I think most of the rain has moved on out.       It's always a change in weather that gives the opportunity to do something different.      I went out to what's left of my deck garden and got a hot pepper to cut up and put on my breakfast sandwich.       I love hot pepper on them every morning.      That's something that my Grandmother on my Daddy's side always done.      I remember when I was a kid she had a pot of pepper that she moved from window to window in her house and she kept that single pot of pepper for years.    It had the hottest little peppers I ever seen on it.     They were tiny, but they always say that dynamite comes in small packages.    If that's so, then these little peppers were dynamite.      hahaha       I love for memories like this to come to mind.       It's always good to reflect and remember some of the things from yesteryear that helped you to become who you are.  There are many things about my Grandmother, both of Grandmothers, that helped make me the woman I am today.       I seen both of them work hard.       I seen my Momma work hard.       All the people I came from were hard workers and I have tried to be like them.      I hope I have made them proud.      More than anything else, I hope I have made my Savior proud.  

Sometimes when we read scriptures, we want to read stuff into them that's not there.      Other times we want to gloss over or ignore what scripture actually does say.       Sometimes we think it says one thing and it actually says something else.       Or we will take scripture out of context and that's one way we try to make it say what we want it to say.     When we read scripture we must be open to the truth that scripture reveals to us.    When reading scripture, we need to be open to what the Lord wants to show us.    Scripture never changes but our understanding may change.     Scripture is the Living Word of God.     He may show us something in addition to what He showed us yesterday, from the same scripture.      What ever He shows us, we need to take it to heart, even if we don't understand it yet.     When I read the scriptures, I ask God to open my mind to the understanding of what I read and open my heart to receive what I have understood.       Understanding, knowledge and wisdom go hand in hand.     We will never have wisdom until we first have understanding.      Understand what we read.       Having a concept of what words actually mean.       If we don't understand words, we'll have a hard time understanding what we read.      

When I was still teaching a Sunday School class, I would take a word from the scripture that happened to be a focal word and I'd do an in-depth word study on that word.      When we got into the lesson and I started sharing about a particular word, I would see ladies having what I called "lightbulb moments".  Instantly, they got it.      And a word that they had known for 70 years took on a completely different meaning after we went thru the mini word study.      I have wept many tears of sweet joy when a lady or several ladies would come to me after class and tell me they had learned more in the last 45 minutes than they had in the last 70 years.      What a blessing.      I sure do miss that class.      Sadly, most of those ladies have gone to their heavenly home.      But they sure was a blessing to me.

I say that to say this.      If you find yourself struggling with understanding a particular word, do your own word study.     Find out what the word means in the secular world.       Then find out what it means in the biblical world.      See if the two arenas, secular and biblical, have any common ground and go from there with what the particular word means.      Honestly, I think that is how we come to grow in our understanding, knowledge and wisdom.   

I don't know what all I'll be getting in to today.       I am hoping to get some sourdough bread made.      I have a starter that I have been working on and I took out some of it this morning to make what is called sourdough "discard".      When you feed your sourdough, it's makes for a stronger and healthier dough if you take some out, "discard", before you feed it each time.      The discard is still perfectly wonderful to use in some type of bread.       I have used discard in cornbread.      That is some kind of "deliciousness" right there too.        I am actually looking for an english muffin to make with my discard today.       I'm trying to find something that  is lower in calories and carbs than the usual english muffins or even breakfast breads in general.       But, we'll see what actually happens today concerning my bread.      I need to go to the store sometime today too.      I actually need to go somewhere or make an online order and get me a new digital kitchen scale.      My digital scale is hit or miss.      I've had for many years and it wasn't great when I got it.      I just don't even know where to begin looking for one.  So, I guess I'll just start and see what I find.      I can do that.

If I do anything worthy of pictures today, I'll share with y'all.      Oh, I almost forgot, I have a watermelon I need to get cut up and put on my dehydrator.      The last dehydrated watermelon of the season.      Kinda sad to think about.      We have enjoyed our dehydrated watermelon.

This is what my dehydrated watermelon looks like.       Almost like strips of bacon.        It is delectable.  So funny take a bite of something that is so familiar, yet so strange and delicious.

Have you ever had crispy watermelon?        Well, if you have  a dehydrator, it's not too late to try it.       I cut it about 1/8th to 1/4th inch thick and set my dehydrator at 110* and then set it to 48 hours and let it go.      It's dry when it's dry and not until.      Time means nothing when dehydrating.      Everyone wants to know how long it will take.       Don't worry about how long it will take because you can NOT rush the process.      If you do, you get mold and that is definitely NOT the end result you are looking for.    For the watermelon, I store it in the fridge in a n airtight container and it keeps it really crispy and snaps when you bite it just like a potato chip.     Yes, it's that crispy.

Yesterday's Dehydrating - DONE!!!

Good morning Blessed Ones!!!       I sure  hope and pray that your morning is going splendidly!!!      I pray that as you look around you that you can see the many ways that God has blessed you and loved on you today.       If you woke up and are reading this, then trust me, He has already blessed you mightily.    I was looking out the back door and I seen a squash bug.      hahaha      As much as I detest them, I did have to just stop and thank God that He allowed me to see it, even though I wanted to squash it myself.  I didn't, just because I didn't have time.      hahaha      When I look out and see the beauty of Fall starting, again, I am so humbled and thankful for His blessings on me.       First of all, He got me up this morning.     Then, I'm thankful for my sight to see all the beauty now, with the understanding and hope of even more beauty in just a couple more weeks.      No one paints a picture quite like our Father.      He is original Master of All Things!!!!      And I do love the beauty He blesses us with.      Another thing I'm thankful for is my hearing.      It's not as good as it once was, but praise Him, I can still hear some of the lovely sounds just out side my door that nature has to offer.     I'm thankful for the harvest that I've had and still getting from my little deck garden.      Yes, I would just have to say that we serve an awesome God and I'm thankful for all His blessings on me.        I pray that you can say the same thing.

Yesterday I shared some pictures of what was on my dehydrator.      Well, this morning I took all those goods off and they are now jarred up and ready for the cupboard.      I took some pictures to share with you how I store them.       I save all my glass jars with metal lids.    They are perfect for storing your dehydrated goods.     While we do NOT want to do proper canning; water bath or pressure canning; in them, these jars are perfectly wonderful to use with our dehydrated goods.       I save all my jars, no matter the sizes.     They are all perfectly suitable and usable for something.      As I fill a jar, if it gets full and I need another jar, I just label it and start another one.      At some point in time I may realize that I can actually combine the 2 jars into a larger jar.     That's a good thing.     It frees up a jar, plus it frees up space to put another jar when I get it filled up.     Anyway, I hope you enjoy the pictures and see something you like and maybe want to try it.    

This first picture is of all 4 different products I took from the dehydrator.       You can easily see the jars and varying sizes that I keep and use.        Starting on the left is the shishito peppers.      I actually have 2 jars there.     The next little jar is the kombucha fruit that consists of mango, pineapple and ginger.  That will either go in a hot sauce ferment, or I'll powder it.      The next jar has pineapple in it.     I think I estimated that there is about 6 and 1/2 cans on dehydrated Aldi pineapple in that jar.     And all the juice goes in to my yeast bread.      The final jar has got ginger in it.      This ginger I done yesterday I peeled it, the ginger already in the jar wasn't peeled.      It all goes into my kombucha, so it doesn't make any difference.       When I make fire cider, it won't make any difference for that either.

This is a closer up pic of the shishito peppers  and the kombucha fruit.      If you click on the pictures, it should take to you to larger picture and you may be able to see them better.   Just a little more and I'll have 2 jars completely full of those delicious peppers.       That tickles me too.     I'm worried that it will frost early this year.      But I'm supposed to be getting some frost covers to hopefully prevent that from happening too soon.      I'm hoping that I can put a few of my peppers in my little greenhouse to save them even further into the fall.    We'll see if that happens.                                                                             

This is my pineapple and ginger.       I have a good sized plug of ginger in the fridge, but I really don't think it fill the jar so I'll probably get another one next time I'm at Aldi and work on getting that jar filled.       Ginger is so good in so many things.                                                                               

This is a sourdough bread starter that I just started.      I took out my old started and cleaned the container up and just started fresh with 1/4 cup of rye flour and a 2 tablespoons of warm water.      It is sitting in the oven with the light on.       I'll have to feed it for a few days and do the discard.      That's why I just started a small batch.      I can't stand waste, so hopefully I can do this and keep from having a boatload of waste.     But I am looking for good discard recipes though.     I'll try to remember to take pictures as the sourdough progresses and share them later and some of the bread that I make with it.    If it turns out half way decent.      That is one thing that I'm not confident in, my ability to make a sourdough starter.      We'll see how it goes.                                                                              

Well, I thank you all for joining me this morning for a few minutes in my kitchen.      I love sharing with y'all and I hope I can stay motivated to keep sharing little snippets of what I'm doing.      Maybe it can be a time of inspiration for y'all.     Not necessarily what I'm doing, but maybe you'll be inspired to give something a try that you have been wanting to try or thinking about trying.      My word of encouragement would be to "go for it".      I find that even if I have a failure it's not a complete loss if I learn something.
