"Hope" in Christ is the Word for 2024!!!!!

good morning y'all.         I hope and pray that your day is going well.          we had an early morning appointment and I'm just now getting around to my blog today.      I don't know what we'll do this afternoon, but I really do need to get some bread made.        but we'll see if that happens.       I hope it does.        if I make bread, I'll still be dreaming of gardening.          I'm hoping to get my seeds arranged and ready to plant when it's seed starting time.          what are you gonna be doing this afternoon?        I hope you do something fun and worthwhile.

yesterdays blog post was anything but desireable.         but it was thought provoking for me to get it down and read it and then reread it.          how do we combat the evil that is running rampant on our planet?          HOPE in Christ!!!!!          our Hope in Christ is our only defense to what's going on.

sing this song.       let this be the song for 2024.         it will be my theme song for this year.          I hope it will be your theme song too.          if we're not standing on Christ, we're standing on shaky ground.    let's make sure we're standing on the solid Rock, Jesus Christ!!!!

let's do a quick little "2 minutes in the kitchen with me".            I like to keep a good quick ferment going in the fridge.        get you a good clean sterile jar.         cut up an onion, red or any other kind of onion.        cut into thin slices and separate the slices.        take a jar just big enough to get the onions in it.          you don't have to use a large jar, unless you want to make a lot of fermented onions.         use a cup of apple cider vinegar and a cup of water, with a cup of pickling/canning salt added and then any spices that you may wish.         put in a clove of crushed garlic if you desire.         let this set out on the counter for at least 3 or 4 hours and then put in the fridge.          the longer it sits in the fridge, the better it will get.        this is really good to put on just about anything.          so if you want to try an easy ferment, this one is for you.        it's easy and delicious.         give it a try.

English Muffins and Giardiniera

good afternoon y'all!!!!!!!            how's your day going so far?         ours has been good so far.         we got out early this morning and got our walk done.          it was just a brisk 37* and I felt every degree of it.           we do dress for success when we walk, but it was still a little nippy.        I got in well over a mile and wished I could have gotten more.          but my feet had started hurting and I call it quits when that happens.         if I keep pushing and try to push thru the paain, I'll be down for 4 or 5 days.         so when they start hurting, I stop.         I had a horse step on my right foot when I was 12 or 13 years old and it's been painful ever since and it gets worse with age.       so, since I'm almost as old as dirt, I feel it in every step.          hahaha          but I can walk, so for that, I'm so very thankful.

Years ago when we still lived in a different town, I baked bread.      it seems I've always baked bread.     I baked it the hard way, without a bread machine, without a stand mixer, without a food processor, of which any one of those will properly knead your dough.               I was even called the "crazy" bread lady.             I will admit the crazy part, but only in a good way.               

Anyway, the church we attended delivered meals on wheels to the sick and shut in of our church and the community at large.          During that time, I started making sourdough bread.           I delivered the meals for several of the Sunday Schools Classes, on a weekly basis, that prepared the food.          I started making the sourdough bread in small loaf pans and would take everyone a loaf or two depending on how many we had that week.             Anywhere between 10 to 15 people we ministered to on a weekly basis. 

One of the elderly ladies I delivered to was a lady of few words, she was kind, just didn't have much to say.            She would let me hug her and that's about it, she wanted her door shut.           I understood then and I understand now.               

Anyway, the 3rd week after I started making the bread and bringing everyone a loaf, she was at the door and eagerly waiting for me.        She had a smile on her face as big as those little loaves of bread.            She had the door open and the first thing she asked me was "did you bring more bread?"              I smiled real big and said "yes mam I did."            She wanted to know if I made it.           Again, "yes mam I did."  

Then she wanted to know who told me her secret about making sourdough bread.           I laughed and told her that no one had told me her secret that it was my own recipe so to speak after I tweaked the original recipe.                She laughed and said "I know what your secret is."            I finally laughed and said, "well, yes, I do make it with love."           She said, "ok, that too."          But she pulled me close and whispered in my ear exactly what I put in my sourdough in addition to the usual ingredients.

I asked her how she knew and she said because hers was the best sourdough bread she had ever eaten and she said mine tasted just like hers!!!           When I started making my sourdough starter last week, that conversation with that sweet lady popped in to my head and I just wanted to share it because it has made me smile for between 25 to 30 years now.

Anyway. my sourdough was finally ready to use and I decided I wanted to make something that my husband and I both enjoy, but I have never made them before.           I have made a boat load of all kinds of breads, but I've never made these before, but I finally made some.           I can assure you, I would not have made them today were it not for my Bread Machine to mix it in.            I just set it on the knead function and walked away for an hour and a half.   

What, you may be asking?         I made English Muffins!!!!!          Yes and Amen!!!       I did and I don't mind telling you one of my secrets in these was a whole lotta prayer.          Thank You Jesus for helping me today with my English Muffins.             I only made a half batch, which should have been 8 regular sized muffins, but I ended up with 8 ginormous muffins.        hahaha          So, when I make a whole batch, I plan on getting about 20 and will have plenty for the freezer.    

I don't see me buying English Muffins anytime in the near future.         Yay!!!        I almost forgot to take pictures, but I did remember and snapped a few.         Hope y'all enjoy.         And they do smell as good as they look.              Go ahead and drool, it's ok.           I won't tell anyone.       hahaha

if you can make heads or tails out of my recipe, you're free to use it.        hahahaha

you know what, these are not the prettiest things, but they are quite tasty.

and look at all those nooks and crannies that english miffins are famous for.

so, let's do a "2 minutes in the kitchen with me" real quick.          I had been wanting to do a mixed veggie ferment.    
 
you can buy pickled mixed veggies called Giardiniera.        it's an Italian relish that's usually done in vinegar or oil.          mine is done in neither.           it's done in a ferment brine.           I don't care for veggies in vinegar any more, although I do eat them and I certainly don't want veggies in oil.        I  know, I know, those are the most popular ways of preserving lots of things, but I'm going for what I like.           hahaha 
  
I used cauliflower, bell peppers, orange bell peppers, yellow bell peppers, red onion, vidalia onion, carrots, zucchini, and yellow squash.          that's it.             I didn't use anything else, because I didn't have anything else fresh.         hahaha           I do wish I would have had some greenbeans.           but I have a container of fermented greenbeans in the fridge.           I didn't use any kind of spices either.     you can use spices and most people do, but I wanted to keep these tasting like the veggies.  

My brine is a mixture of 1 gallon of filtered water and 6 tablespoons of kosher salt.          you don't want to use any salt with iodine or any anti-caking agents.         sea salt is best if you have it.         I didn't, but I did have kosher salt, so that's what I used.    

cleanliness in the fermenting process is very important.        I can't stress that enough.         make sure everything is clean.            you can even run all jars and cutting board and utensils thru the dishwasher to sterilize them if necessary.           just make sure you're  very clean with doing this.   

wash and scrub your veggies and I always cut away any blemishes or spots.           cut your veggies however you want to cut them.          on the carrots, since they are the firmest veggie I used, I did make smallish sticks.             I cut the squashes in half and then cut them where they was thicker on one end than the other.        I made sticks out of the bell peppers.         and I cut the cauliflower segments pretty small too.       I made wedges out of the onions and then broke them up some.       nothing fancy at all.   

I had gotten a separate gallon jug with "filtered" water in it.         you want to use filtered water so there is no chlorine.         chlorine will inhibit the fermenting process.          then I added the 6 tablespoons of kosher salt and got that dissolved.  

once all the veggies was cut up and mixed together, I put veggies in my jars.       pressing them down as I went.        you don't want to overfill the jars.   
  
once the  brine is in  the  jars, I put the  wieghts in on top of the veggies to hold them down in the brine.        it's important for all the veggies to be under the brine at all time.             the big jar has a split weight and the quart jar has a small clear glass weight.    

once the weights are placed, I then get a spoon and take out any of the small pieces that float.        I take a small zip lock sandwich bag and fill it with some of the extra brine and press the air out of the bag and put it on top of the weight.                this is just extra protection.         it's not necessary, but I do it.  

for the lids on the jars, they have a water lock on top of them that will allow any gasses to escape without the jars exploding or having to open them.         also, set your jars in a tray or a bowl to catch any bubble over.           when this starts really bubbling, there can be a mess, so I always put my jars in a tray or bowl to fit the size jar.         put the jar in a safe place.          I wish I had a cabinet that I could dedicate to fermenting.         now the hard part.....waiting, waiting, waiting, patiently waiting.   hahaha  
 
in a couple of weeks, I'll check the taste and go from there.          once they have the flavor profile I'm looking for, I'll put them in the fridge and they will last a long time, or not, depending on how fast you eat them.          hahaha  

what I like about ferments is that the veggies are still raw.        but the fermentation process preserves them.          the fermenting  process creates a lot of good gut healthy bacteria.         fermented produce is really good for you.           do a little research on it and find out just how good it is for you.

this turned out to be a most wonderful ferment.        it only gets better with age.

one thing that I did learn, is that the amount of salt is way too much.          I used what the recipe recommended, but since making this recipe, I've found that most recipes call for much less salt.          if you  have a blood pressure problem or a water retention problem, this may not be for you.        but if you can eat this, it's really good and the fermenting process is really good for your gut health.

Make a Plan and Be Flexible

good morning wonderful friends!!!!!!           I hope you are having a wam and cozy morning today.      it was 17 degrees when I got up this morning.           yup, it was and right now, at the 9:00 am hour, it is a hot 23 degrees.        hahahaha          well, I guess if you're 20 below, then 23 degrees would seem warmer for sure.          maybe.         I don't know though.       hahaha        I just know that while it's cold, I'm dreaming of warmer days this coming spring.        so I'll keep warm thoughts even if it is cold outside.          I hope you will too.

this is just some of the things that has been swirling around in my head.         I felt the need to get it down in writing, because it may help me and hopefully help someone else.         if it helps just one person, then it will have been well worth my effort to do this.           most of it is stuff that I need to remember to do.  

the days are a struggle at best anymore, with the sense of urgency that is in everyone's lives over the food situation.          I get it.           I understand as much as anyone about that.          I've been around a while and seen the same sense of urgency a few times.           some situations have just been the urgency in our personal lives that have made us change our habits.           when these urgent situations have come up in your life in the past, then it helps you to be better able to adapt to what may be coming around the corner, hopefully.

when you go shopping and see the shelves, don't focus on what's not there, but focus on what "is" there.               ask yourself how you can use what you do see and don't worry about what you don't see.         I have learned early on in my life that I'm not shackled to one brand or to one store.          I try to do my research and make a plan and a list and hit the trail.            armed with a list and a plan, I know I have set myself up for success.            even if my list changes and my plan changes, I've done all I could do before hand to be successful.            if I have dried beans on my list, and they're out of what I wanted, I'll change that plan and get the next best thing close by.             I may have wanted pinto beans.               instead, I'll get red beans or black beans or whatever is there.            if my plans changed a lot, I may be able to pick up 2 or 3 bags of whatever kind of beans I can get.          one for now and another one or two for later.                I usually go shopping with a set number of dollars to spend.                if I can't get one type of meat, I'll look and see what is available and change my plans and get what I can get.                  I may even be able to get 2 pkgs of something else.       one for now and one for later.

same thing with fresh produce.           make your list and be flexible.            get what you can get.   when I look for green onions, I make sure I get green onions with root balls on the end.        I'll cut all the usable part away and save about an inch plus the roots and I'll hydrate the roots for a day or so and then I'll plant the roots of each green onion and I can cut greens from them all summer.         when they get about 7 - 9 inches above the ground, I'll cut it off and it'll keep on growing.          if we don't use it all, what's not used goes on the dehydrator.              I'll do the same with leeks.             I make sure they have plenty of good roots on them in the store and then cut the end off and hydrate those roots too and plant them and they do just like the green onions.            so for the cost of 1 bundle of green onions and 1 bundle of leeks, I've been able to cut the greens off them and use and dehydrate all summer long and have a little to go on into the fall and winter with.                 you can also plant the end of your celery and get lots of flavorful celery leaves to use and also dehydrate.   

when I get home with my fresh fruit and veggies, I use a marker to write the date I purchased them on the bag or container they came in.            that way when I reach for something I can quickly find what needs to be used first.              I'll prepare bell peppers sticks, carrot sticks, celery sticks, diced onions, diced green onions, and have all these ready to go in salads.             I'll usually prep on Saturday and Wednesday.                anything left in the prep boxes on Saturday and Wednesday, goes into my dehydrator.               then I fill my boxes again.               for salads and any kinds of soups or anything that needs a good dose of veggies in it.                 having them pre-prepped, means it's easier to use and that means less waste.                 then what does get dehydrated  will also get used in some of the same dishes that I would use fresh veg in.              they've just been dehydrated and they will work beautifully in a soups and casseroles.

this isn't an end-all to the urgency in which we are living, but it should help me, and maybe you too, to remember that if there is anything that is in our control, it is how we look at what we can purchase.  make a list, make a plan and then, be flexible.   

with all of this, is also the fact that have the ability to cook from scratch.          some of us older ones grew up watching our Mommas and Grandmommas cook and whether we realized it or not, we was learning from them at a very early age.         a lot of younger people today hasn't had the same experience.                so we're eating instant this and premade that which is double, triple or quad the price of the items to make it from scratch.                even if you don't want to make it from scratch, look for a less expensive "whatever" and add a few fresh veggies to it.              for instance, we like a pizza every once in a while.                I'm not paying $15 or $20 or more for a pizza when I can buy at 4, or more, cheaper pizzas with that same money.             I go home, bring out my veggie boxes that has onions, bell peppers and green onions, put some extra olives on it and bake it.             no, it's not the expensive pizza, but it made us happy and I know what we saved and because we went that route, we'll have 3 more pizzas with all fresh veggies that we wouldn't have had if I had bought the expensive pizza.               that's just one example of how we can make changes to save money which in turn can help us be able to actually buy more groceries in the long run.          and have more meals at the ready for our families.             we can turn one expensive meal in to 4 or more.

are you brand loyal or store loyal?              and won't even consider a different a brand of tomato sauce, or frozen veggies.               if so, consider getting over that.            hahaha              because the brand and the store doesn't care about you and your financial situation.             I learned a long time ago that I have to make the choices that's best for our checkbook, not for the stores or the brands.            I'll not buy subpar food.             but if you'll do some digging, you'll find that most of the store brand foods are pkged right in the same facility as the name brand is, it's just labeled with different labels.        so if you think you'll give up quality or taste, you won't.            learning to cook from scratch can save a lot in that area too.             learning to use herbs and seasonings, a pinch of this, and a dab of that will go a long way in making something taste wonderful.

on the other hand using what is readily available is great too.          I made baked beans a few years ago and took them to a potluck meal.               one of the ladies asked how I made them even before she tasted them.                  yes, I had used 3 cans of pork and beans, why?             they were already cooked and seasoned.                  I drained the pork and beans and rinsed them off and put my own homemade sauce and seasonings on them and popped them in the oven to bake and cook the bacon.            when I told her they had pork and beans in them, she actually snarled her nose and grunted real loud.        I just laughed and paid it no attention.            she got some of them and started eating them, I glanced at her when she took a bite and you could actually see her taste buds doing a happy dance.           everyone mentioned how good they were.              I finally asked her what she thought, and she admitted they were better than any she had eaten before and better than any she had ever made.        she grunted again.           hahaha                  it wasn't because of the pork and beans at all, it was because of how I dressed them up.               but she took an attitude that I had used "pork and beans".             I'm not gonna shun everything precooked, especially when it's a decent price.           I just took advantage of the fact that they were already cooked.                plain, store brand pork and beans have always been pretty cheap.   and more than likely, I got them on sale.             so you can take advantage of sales and stock up on precooked items such as canned beans and make them completely yours simply by dressing them up.  

I was thinking about all this while grocery shopping this morning.        because I had made my plans and my lists and then was I flexible.          a couple items I went after, I decided not to get.         with that came the fact that I would have a few dollars to use on something else.           so I headed back to produce and picked up some leeks with roots and some green onions with roots.        win win!!!       the leeks and onions will go on the dehydrator and the roots will be planted to grow more.        so that was a good way for me to be flexible this morning.            and it will help me get my stash built up.          the roots will grow and I'll be able to cut from them all summer and add that to my stash too.

if you don't know how to cook from scratch, pick one recipe.          something that you and your family really like.           try to find a simple recipe for it and make it your own.          get it to the point that you don't even need to get the recipe out if you don't want to.             then find another simple recipe and do the same thing.                work on getting 2 or 3 good simple scratch dishes that you can rotate on a weekly basis.        start with simple recipes and use herbs and spices.

look for ways to beat your sense of urgency in taking care of your families food needs.         think differently about what you see.             learn to cook simple dishes from scratch.        if you're not used to it, it can be daunting.               don't try to change your situation in one day, but do what you can do every day to make a difference.            little steps will start turning into big differences.           find someone that you know personally and ask that person to help you learn to cook some things that you don't know how to cook.           if we all try to help someone, then we can help change some of the urgency that we are feeling.               maybe even try to grow a few things.         as simple as the leek and onion roots.            no, those 2 items won't feed your family.           but you'd surprised at how much confidence something as simple as that can give you, especially when you've felt hopeless.        and they also add great flavor to some of those dishes we cook from scratch.        I hope this gives someone the idea that they can change the way they are serving their family. 

my Momma cooked mega and lots on a daily basis and every bite of it was from scratch and delicious.  we grew up on beans, potatoes and cornbread.           she baked over 30 biscuits from scratch every morning of the world for as long as we were all still at home.             we knew what most meals was going to be before we ever sat down to that meal.                those meals were as regular as clock work.  they were always delicious.              none of us ever complained.             we had a mindset to be appreciative of what we had and didn't miss what we didn't have.           we may have to learn adapt to things being harder in the future.              there's lots of things that we will need to learn or relearn.   make every day a day to learn something new.                try not to wake up one day and find out that you haven't learned what you should have.             relieve some of your sense of urgency by learning something today that will help you make your next grocery shopping trip more successful.        make a list, make a plan and plan on being flexible.

""Ezra 9:8  But now for a brief moment Adonai our God has shown us favor in leaving us a remnant and giving us as a peg in His holy place. Thus our God has enlightened our eyes and has given us a little relief in our bondage.""

I was reading in Ezra this morning and came across this little phrase, "a peg in His holy place".         I love when this happens, which is just about every time I read scripture.          go back and read the whole thing to get an understanding of what's happening.           but for this moment in time, Ezra was grieving over, yet one more time, the children of Israel going against the covenant they had made with God many years ago.            all the prophets up to Ezra had already dealt with this over and over and over.             there was just a remnant left and Ezra was praising God for Him saving them, small in number, His chosen people.        and that even though they had been slaves yet again, God was with them.          and yet once again, the people had turned from God.

this is so familiar even for todays times.          we sin against God, we know that He is still with us and for us, and we sin against Him again.        and He is still with us and for us.       it's a vicious cycle.      I know, because I have been there done that, and will again and again.   

my understanding of this in the whole picture, is that God was using this remnant as a peg in His holy place.           they would always have a place in His holy place.           that's why He had His hand of protection on them at all times.  

what I am most thankful for today, is that "Jesus is our peg in His holy place"!!!!            when I can do nothing, which is all of the time, I cling to "Jesus, our peg in His holy place"!!!      Jesus is my security in all things.  

Isaiah also mentioned something like this "a nail in a secure place".       and I believe that he was actually referring to the coming Savior, Jesus Christ.        so, I love both of these references.  pegs and nails make things more secure and strong.        Jesus is our security and strength.  

if we know Christ as our personal savior, then we have a "peg in His holy place"!!!       that peg is Jesus.         we have a place in His holy place all because of Jesus Christ.        Praise His holy name!!!! 

I challenge you today, as you read scripture, let the Lord show you things like this, and then do some research and find out all you can on just a little phrase such as "a peg in His holy place".        it is such a blessing when God shows us something like this and thenwe get to dig deeper and lean into who God really is in our lives.        when you dig deeper and learn more, that makes you want to do even more excavating of the word of God and learn more and more.       His word is fresh and new every day.      I pray that if you havent discoovered that, that maybe today will the day that you start digging deeper into His word.

looking back at the weather of late, it seems we've had some bad times and a lot of others have too.    some are in the midst it even as I type.      so this is a timely post.        it was in my memories and I shared this back on this day in 2018.          just remember, we're never alone.         this is something I wrote a few years ago when a friend was in the midst of a terrible personal storm and the Lord just made Himself very real to me in a way that this is what He inspired to tell my friend.

How many have ever been in the midst of a "storm" in your life and while going thru the storm, you're wondering how in the world this storm is ever going to end?       Road blocks  and high water signs is all you can see in the distance.         But in the process of just doing life, at every turn, your best friend is there.         That best friend being Jesus Christ, your Savior and Lord.       He is there, just going ahead of you clearing road blocks and parting the waters, all the while helping you to maintain the joy you have in your soul.        Just knowing that Jesus is the One that spoke to the storm like a Momma would speak to a fussy baby and saying, "ssshhhhh, Peace be still".         He still does that today.       If you are in the midst of a storm, just know that you are not alone.        Your best friend is with you today.           The reason I can so boldly say that is because yesterday was a "ssshhhh, Peace, be still" day for me and my best friend seen me thru it!!          Everyone has storm days and everyones storms are different.           The thing to remember is this; you are the only one that can walk your own storm out, but you don't have to do it alone.            So, if today is a storm day for you, let me declare over your storm, "ssshhhh, Peace be still", your best friend, Jesus, is with you.

have you ever wondered what the enemy wants from you?          well, right here is a list of what the enemy wants.         we need to make sure that he doesn't get anything from us.      stand firm.       trust God!!!

the one thing that is so sad, is that we see far too many people who are NOT "sober minded".        to be honest, I've never seen as many people in my life who have turned their minds over to the devil.        it's frightening to think that in all levels of government we have people who are what I would call "brain dead".         they have sold out to the devil in every area of life.        

Lord help this country and the few of us who still have a sober mind and use it.       we have to stand firm!!!!!

this is from a post back in the spring of 2020.

let's do a "2 minutes in the kitchen with me".        How do you see dandelions?       I've always seen them as weeds, till now.         I've known for many many years that people made dandelion jelly and always wondered about it.         I think that is one thing that my Momma, never made when we was growing up.           If we picked it, she would make something from it, but we never took a bucket of dandelion heads to her, shucks , our loss.        hahaha

 Yesterday we was walking the perimeter of the yard and I noticed lots of dandelions.        When we was done, I went in and got my little bucket and we walked the yard one more time and picked the dandelion heads.          I come in and washed them and then spun them dry in my salad spinner.       I took a picture of them and sorry to say that it's blurry, as you can tell.         

 I put them in a small pan and poured boiling water over them and let them set overnight and steep.       When I strained them thru a coffee filter, I had 1 cup and 1/8th of liquid.        I put double that in sugar, 2 and 1/4 cups.               Put that on the stove and let it boil and cook down a bit and then poured it up in bottle with a pour top on it and the rest I put in a small jelly jar.   

It is really delicious.          It's not really strong, but it is distinct and I'm sure it would have been even more wonderful if I would have had more dandelion heads.         

In my reading up on making jelly, I also found out about making syrup and that's what I decided to make.        In reading, I found out that our Grand Mothers and Great Grand Mothers done this very thing.            It was considered the "poor man's honey" at the time.          Those who had bees, had honey that tasted like dandelions because of the bees dining on the the dandelion flowers.         A lot of people couldn't afford honey, but they would sacrifice some of their precious sugar to make the "poor man's honey" and use it sparingly and on special occasions.          If you see a lot of dandelions, don't see weeds, try to see "poor man's honey" and make some.

and one thing I've started noticing is that in seed catalogs, you can now purchase dandelion seeds.       I've seen people ask who would buy dandelion seeds.          my answer to that is the people who don't have dandelions growing naturally in their area.         for most of us, it's a coommon weed and we want it gone.         but it's not just a weed.         the whole plant is useful.        I think the roots have medicinal properties as well as the rest of it.         and it's the very first food that bees in nature will have to eat.     so while doing this little project, I learned a lot.          and weeds are only weeds if we haven't figured out how to use them in our every day lives.      

so, do you see a weed or do you see something useful when you see dandelions?

let's do another "2 minutes in the kitchen with me" today.             I recently started a fresh batch of fermented green beans with my freshly dehydrated onions and freshly dehydrated bell peppers for added flavors.         I love fermented green beans.         so good, still raw, with all the crunch factor, completely preserved and good for you.          fermented foods promote gut health.        I used filtered water to start my brine.           I stuffed my green beans, onions and bell peppers in the jar and poured the brine over it to the top making sure no bean was sticking up or out.          I filled a zip top sandwich bag with extra brine and pushed it down all around the beans and brine to block out any air and sealed the ziplock bag and put the lid on.          I also set it in a small bowl to catch any overflow when it starts bubbling.              I'll leave them sitting out to ferment for a week or so.        I love a long ferment time, so I may even leave it longer.           the main thing is to make sure that you don't open the jar and expose any of the beans to air.          that can introduce mold into your ferment.        once it molds, you toss it.         so this jar will not be opened till I'm ready to put it in the fridge.   

about mold in a ferment; if you have that happen, toss the ferment and boil a pan of water and place the jar and lid in the pan.      I usually put a little bit of bleach in my water.         I'll let it set in that boiling bleach water for a few minutes and then wash the jar and lid real good.        some people will throw the whole jar and lid away, but that's not necessary IF you put it in boiling water with a little bleach in it and then wash the jar and lid really well.        if you don't want to do that, then tossing the whole thing will be best for you. 

if you don't get rid of the mold 100%, then it will happen ever time you try to use that jar and lid.      

this batch in the picture was from 2 years ago.         it was soooooo good.         when I run out of them, especially at this time of year, when I don't have fresh green beans, I get a bag of fresh greenbeans from Aldi and I'll wash them good and just start the process over again.        so no matter the time of year, I can have fresh fermented greenbeans in the fridge.      they are delicious.

Happy Friday!!!

good morning!!!       it's supposed to be raining in my neck of the woods, but it isn't yet.       I don't know whether to happy or sad.        I need to get my taters out of the garage and let them get some sun, but there's no sun.       I guess I'll just leave them be.       I hope they make a few small taters.         this has been a test so I'm going to grow taters next year.         I plan on having lots of taters, green beans, garlic and what ever else I can come up with.        maybe try to get some more carrots and root veggies  going next year too.        seems like I've spent a lot of time trying to grow stuff that we don't necessarily care for, but now........going to concentrate on stuff we do like and love to eat.        sounds like a good plan to me.

I thought I would share another "2 minutes in the kitchen with me".      this is something that we love to make.        I use my air fryer almost daily, I just don't get pictures of everything I fix in it, but I was mindful when I was fixin' lunch for us yesterday.         I made salmon patties.

1 can of drained salmon, 1 egg, 1/4 cup of bread crumbs, 1/4 cup parm cheese, 1/2 small onion diced, dash of onion powder, dash of garlic powder, dash of salt, dash of black pepper, 1 tsp italian seasoning and enough evaporated milk to mix well (because that's what I had).

I lined my air fryer with a parchment round and scooped out a large serving spoon of salmon mixture and made into patties.        I sprayed the tops of each pattie with avocado oil.       I got 5 in my air fryer, they are pretty large, and the last one I popped in the toaster oven just because I wanted to get lunch ready and done.         I just used the pre-set for fish on the air fryer and cooked it for about 8 minutes and took the basket out flipped the patties and cooked for about 6 or 8 more minutes, till they reached the browness I was looking for.

I also filled my electric pressure cooker with green beans, diced onions and potatoes and a little dab of my essential oil aka "bacon grease" (hahaha) and put my long legged rack in on top of them and set my cooking pot full of creamed corn on top of the potatoes and beans and cooked it all in one pot while the air fryer was going.       It was a great lunch with enough left overs for a couple more meals.      Also had hard boiled eggs that I fixed earlier in the epc.       Anyway, just wanted to share the pics.       The salmon patties are sooooooo good!!! Everything else is too.

I have to say, that for years I have baked my salmon patties in the oven instead of skillet fry them. Since I've had an af, this is my preferred method.           I did bake one in the toaster oven and it took 2 times longer to bake in the oven than it did to cook in the af.

this is a fabulous meal.            


and this is a picture of my green beans, potatoes, onions, bacon grease, salt and pepper to taste and a little dab of chicken stock.           these beans are wonderful and we can make a meal on them or add other food with them and stretch them.          however we have them, they are always a hit.        if you have an electric pressure cooker, use it to prepare greenbeans and potatoes just like this.       your taste buds will thank you.

another delicious "2 minutes in the kitchen with me".        I love sweet potatoes so, this is my delicious way to fix them and enjoy them.         I preheat the oven to 350* F and then peel my potatoes and slice them pretty thin.         I spritz them with avocado oil and then sprinkle them with cinnamon and pop them in the oven for 50 minutes to an hour.          it just depends on how dark and carmalized you like them.         these are so good and they are a perfect side to a meal or even a good snack.      I'll take a whole bag and cook them like this and they are ready to go when I want some.



I put them on parchment paper to keep them from sticking to the baking sheet.      I love them to be roasted till they are really dark.        I hope you will try them and love them like do.

sometimes when I'm in the kitchen, (which is most of the time, hahaha) I go to my happy place and that's spending time with my Lord and singing to Him.       last evening I was in the kitchen just fixin' supper for my sweet husband and me.    It seems that's when I'm at the most peace, when I'm cooking.        (That explains why I can't lose weight, one question answered, hahaha)       Not that I'm the greatest cook by no means, but I'm happy cooking for us.            In the moments of happiness while I'm cooking and cleaning the kitchen after I've cooked, I've got an awful lot to be thankful for.           Sometimes I don't let that show as much as I should.          But when I'm in the kitchen, it seems that the hymns of faith, the old hymns, just flood my mind.           I sing the whole time I'm in the kitchen.        I make a joyful noise unto the Lord.        Now I'm sure that if y'all heard it, you probably wouldn't think it's so joyful, but the Lord loves for me to sing to Him.         This is the song I was singing, I hope you will sing it too.

I am Thine, O Lord, I have heard Thy voice,
And it told Thy love to me;
But I long to rise in the arms of faith

some days, I just need to cling these words!!!!        the enemy wants us to live in fear and to wonder if Jesus is enough or have "I" done enough (and, NO, we could never DO enough, Jesus IS ENOUGH, He DONE it all!!!!), of if God really does love me and if His words are true.       the enemy started his lies in the Garden of Eden when he told Eve that God had lied to she and Adam.    the devil didn't use those words, but that's what he was telling them, that God had lied to them.       well, we know now who the liar is and still, sometimes we forget.       we listen all too easily to the lies that he tells us.        we are living in days now when the lies of the devil are running rampant.       and scripture tells that we will be living in days when everything that God has declared as right will be considered wrong in mans eyes and everything that God has declared wrong will be right in mans eyes.        

when I read the Old Testament and see where God's people lived evil and wicked lives time and time and time again, I can relate it to the times we are living in.        how many times did God spare His people, only for them to do the same evil and wicked behavior as before.        they forgot the goodness and faithfulness of God.

Lord, help me to never forget your goodness and faithfulness.        help me to keep You at the forefront of all I do.        keep in Your with ever step and every breath I take.        You know my heart and You know the desires of my heart and I pray that my desires are always pleasing to You.   amen

now, back to the song.        sorry, but there is nothing on the market today that comes even close to the biblical message and meaning in this song.

I make my brine with about a tablespoon and a half of salt to a quart of filtered water.          once they have fermented, then you can store them in the fridge and they are delicious!!       I hope you give it a try.     they are so crispy and crunchy and just truly wonderful.        when I don't have home grown green beans, I'll buy a bag of unbroken fresh green beans form Aldi and make a batch.       that way I can have them year around.        and they do HAVE to be stored in the fridge.

When life gives you downed tomatoes.......hahaha

Good morning from my cold neck of the woods.         it's a chilly one, nothing like it could be though, so I'll take it.       it was 32* F when I got up this morning.       but being on the chilly side doesn't keep the outside noise down.         there's lot of traffic out on the main road going by.        I often wonder about the people and the lives they live.       sometimes I hear a lot of farming taking place.      airplanes flying over.        the sound of sirens coming from out town.       what I love most though is hearing the birds chirping and frogs croaking outside our window.       those are the sounds that I love to hear.        but I guess my little frog buddy is somewhere trying to stay warm.       and the birds are probably out chasing the early worm.       ever once in a while, some of the dogs will get riled up and bark for a while.      there will be about 5 or 6 to join in the bark fest.       this is just a normal sampling of what it sounds like around here.         I hope you have lovely sounds to listen to where you are.          I hope you enjoy your day.

so, back in the summer we had some damage to the tomatoes in my deck garden.      (read the story below about pruning)  several of them blowed over and I had to do some pruning on them.        was going to do this when the temps cooled, but I had to it sooner than expected.  the rain has also helped the tomatoes since the pruning.        I'm happy about that.          every time I touched a tomato this morning, they were falling like crazy and I stepped on a couple hundred before I thought I could do something with them.         so I got rid of the ones I had stepped on and started picking up the ones that fell and I had almost a quart jar full.      I also picked, literally 5 green beans, (hahaha) and stuck those in the jar too.           I added an onion and some fresh picked basil.           when I got everything in the jar, I topped the veggies with a glass weight to hold everything in the brine.              the brine is just salt water.          2 - 3 tablespoons of sea salt to a quart of water.           I fixed the air lock on the top of the jar per instructions and it is ready to start bubbling and fermenting.        it will be about a 2 week process and then it goes in the fridge for a month.      fermented foods is really good for you.      so, we'll see how this goes.       I hope to actually get a few tomatoes, but this is certainly one way of making good use of a bad situation.         I'll try to remember to post an "after" picture and let you know how they taste.

I didn't get any pictures of this after it was ready to eat, but it was sooooooo good.        I will be doing this again.

most people know what pruning is all about.        it gets rid of dead and useless branches, limbs and fruit that's not what it should be or that is taking away vital nutrients from the rest of the plant.        or even the rest of the body.  

have you ever been pruned?        has God ever pruned something from your life to help the rest of your life grow to be better, stronger, healthier?          I'm just about positive He has.        well, that's what I was thinking about this morning for about 2 hours when I was out pruning my tomatoes.  

the early morning breeze ripped into them and turned them over and knocked a bunch of the little tomatoes off.       as I was cleaning the mess up, I thought of how good that breeze actually felt, but the damage it actually done to my tomatoes was bad.         there are things in all of our lives, like that early morning breeze, may not be bad to someone else, but may knock us down and damage some of our fruit.         but that fruit in our lives may not be the kind of fruit that's pleasing to God.      just yesterday, on a group, someone posted a joke about hiding stuff that they had bought from their husband. 

I have laughed at stuff like that, I have.       call me guilty.        but then I am quickly reminded of ladies that are not as blessed as I have been to have a husband who has supported me 100% in what ever my endeavors have been.         when I didn't laugh at the joke and gave a reason for not laughing at it, a couple of people quickly told me that there wasn't anything wrong with that joke.  

well, I guess that's where a little pruning comes in at.          I told her if she ever laid her head on her pillow at night, wondering if a friend would even be alive the next morning, she would understand what I was getting at, till then, just pick your jump rope back up and start skipping along like the little girl that would make a statement like that.        so as I was pruning the tomatoes this morning, I thought about some of the prunings that God has done to me over the years.  

pruning away selfishness, pride, envy, only to make room for compassion, humility, encouragement and so many other good fruit.       oh, the three that I mentioned are not the only things He has pruned in me, and there is still a LOT of pruning left for Him to do.        I just pray that as He prunes more, my heart will grow bigger for the things that break His heart.   

I pruned on my tomato plants for almost 2 hours and that pruning will be good for a while.       How many hours has God spent on pruning me.        I'll tell you how many, how many ever hours there are in almost 65 years.        that's how many hours God has spent on pruning me.         unlike my tomatoes, I won't even be good for a little while, because I continue to set bad fruit, grow weak limbs and branches, even get a little root rot ever once in a while.         so as I wait to recognize the pruning that God is doing on me, I contemplate the next pruning that I will have to do on my little deck garden to get things ready to produce more good fruit.

I know that most, if not all, of y'all know exactly what I'm talking about.        pruning...it's really not pleasant to do.          because when you're cutting away, you think about the possibilities of some of the blooms and branches you're cutting off.          then you reason with yourself that it's taking vital water, minerals and nutrients from the good branches and fruit you're leaving behind.

oh, I wish I could know the reasoning behind some, if not all of the pruning that God has done for me.  in reality, I  do know the reason.         the same reason I pruned my tomatoes.        He prunes away anything damaged and what will not be a blessing to Him, just like I pruned away what would not be a blessing for us with the tomatoes.   

while I'm not a gardener and farmer and I don't know what I'm doing, I always talk to the Master Gardener while I am tending my little deck garden.         He does know what He's doing and He gives me confidence in what I am doing.         if a plant doesn't make it, it wasn't gonna make it even before pruning.   

The one good thing about God, He KNOWS what He's doing when He's pruning.        He knows what to get rid of and what to leave.          He knows what to water and nurture and He knows what needs to be ripped out from the roots.  

if you know that God is pruning on you right now, just hang in there and lean into the Master Gardener, He is getting you ready for a wonderful harvest.         because He will provide the proper nutrients you need.       just like this afternoon, I will get out and tend to my pruned tomatoes and keep praying for a good harvest.           God is getting us ready for a good harvest, so be ready for the pruning.

I wanted to share this recipe with y'all.         I may have already shared it, but that's ok.       sharing it again won't hurt a thing.         I had been looking for it and finally found it, so I put here again so I won't lose it again.  hahaha         this is a salsa that's good year around.         you might even find a place for it on your Thanksgiving table this year.

Mango Salsa 

1 ripe mango, fine dice

1 ripe apple, fine dice

1 large tomato, fine dice

1 large peach, fine dice

1/4 cup of cilantro, fine dice

1 large orange, juiced

1 large lemon, juiced

1 large lime, juiced

Dash of salt (I do NOT put the salt in it, but you are free to do so.)

Mix together everything that's diced. Stir in the juices from the orange, lemon and lime.  Mix well and let cool in the fridge and use your favorite scoops chips and enjoy.

When I make it, I will usually add 2 mangos and 2 peaches, because I love those.  The recipe is just a starting place.  But if you make it as is in the recipe, it will be delicious.  

If you don't use "ripe" fruit, it will be really tart and then I would suggest a half pkt of stevia.

I have another  "2 minutes in the kitchen with me" to share with y'all.        today is dehydrating day.  

pic 1. 2 cans of canned pineapple in100% pure pineapple juice. drain the pineapple juice.  will use that in bread.  2 - 20oz cans made almost a quart of juice, that's 3 batches of bread. yay and yum!  
pic 2.  the ginger, pineapple, and mango will be used to flavor my kombucha.  
pic 3.  2 trays each.
set dehydrator to 115* and will let it go till it's all crispy dry.  it takes several hours, the rest of the day and then more time tomorrow.  the amount of time will depend on things like the moisture in the produce, the size and thickness of your pieces of produce and the ambient humidity in your home.
having that pineapple juice, 100% pineapple juice to use as the liquid in my bread is wonderful!!!        it makes the softest most delectable bread ever.         it doesn't make the bread taste like pineapple at all, just deliciously soft and yummy.        ginger, mango and pineapple are all really good for you and it's especially good in my home made kombucha.

this is something that I wrote back in 2019, before the world went absolutely crazy.        I don't remember if I've share it already, but here it is again.   hahaha


You know, the state of the country is really heartbreaking and it makes me long for days gone by!!!       I have been thinking a lot about the days of "yore", if you will, and wondering about what makes those days so appealing and why one would love to go and spend a day or two or a year or two back in those times.         The best I can do is try to share with you, in words pictures, what makes me long for those days.

I think one of things that was nice, was that no one had a cell phone hanging from their face.      hahaha   Oh, don't get me wrong, I love my electronic and technological devices, I do.       I really do.     But I also loved the times back then, when if you wanted to find out how someone was doing, you got in a vehicle and went to see them personally.        A visit took effort, not afterthought. 

When I was growing up, I did not grow up on a farm.      Meaning that my parents did not own a farm, but, my grandparents owned the farm that our small piece of property came from.       Our property was on one side of the highway and my grandparents farm was on the other side of the highway.       So, in that respect, I did grow up on a farm.       Looking back on it now, every day on the farm was an adventure.        And it was fun as a kid.        I now know just how hard both sets of my grandparents worked, all their lives to sustain their families early on in their lives and then to sustain the farm in later years.       But for a kid, there was a certain level of fun. 

For instance, it was fun to go with Mamaw to gather eggs.       She never took a basket, because she always had an apron on.       That familiar piece of ladies clothing that I long to see again.       Her apron was her egg basket and she never broke an egg!!!       She had lots of chickens, so there was lots of eggs to collect at least twice a day.       As I ponder on that, I miss it.       There was also time to milk the cow each day.         As a child, my Mamaw was the best milker I ever seen, I just knew she was a professional cow milker.      hahaha       I never could get a drop of milk from the cow!!!       But she could get a gallon of milk in no time flat!!        Papaw was just as good at milking as Mamaw was.   

After the milking, Mamaw would always take her cheesecloth and strain the milk.      That happened without fail, every time.       She would strain out any stray hair that may fallen from the cow into the milk bucket.       If I remember correctly, they may have milked that cow twice a day.        It gave lots of milk with lots of cream.        Then Mamaw would take some of the milk and make butter.      Her butter was the best butter I ever had in my life.       Take a fresh baked biscuit of my Mom's and put some of Mamaw's fresh homemade butter on it and it was simply delectable.        I always loved to help Mamaw churn the milk too.       She had the big old crock churn with the lid and the wooden dasher in it and once she got the churning process started, I would help and I enjoyed that a whole lot.       After the butter was removed from the milk, the remaining was buttermilk.       She didn't take every speck of butter off the milk, so it would be good and buttery and it was really good.       An after supper delicacy was buttermilk and cornbread.      It doesn't get much better than that.       Oh, and cornbread was delicious slathered with some of the home made butter at suppertime.

They also had a huge garden that my Mom helped them with each year and they shared the produce.  So, a lot of the time, all of us was in the garden.   If we was too young or too small to help in the garden, we was nearby in the fence row where the adults could keep an eye on the smaller ones.   One of those times, my brother and I got into poison sumac in the fence row, but that is a whole different story in itself!!    But that too, just goes along with the days of yesterday and some of things we survived.   hahaha

When it come to farming, Papaw farmed the old fashioned way.      He had two mules, Jim and Red.  They were the largest mules I ever remember seeing in my life, especially as a kid.      He loved those mules.        He was good to those mules and expected a lot from them and they never failed him.    Every once in a while he would go into the kitchen to his brown sugar jar, setting in that old fashioned cabinet that so many farm houses had back then, and get a spoonful in each hand and walk out the screen door as it slammed behind him and the mules would hear the slam and look up.       If they seen him walking to the fence, they would come to him and each one would get the special treat in his hands.       After they had eaten the sugar lump, he would rub them on the face and head and pat them and slap them on one of their big sleek shiny sides before they walked off.

The slamming of the screen door is one of the sounds that I really miss from those days.      No matter when you heard that sound, you knew some activity was getting ready to take place.       Or maybe a particular activity had just finished.        Maybe the filling of coal buckets in the winter time.       Or filling of the water buckets from the well.       Or taking scraps out to the chickens.        Or maybe Mamaw was hanging laundry on the clothesline.      But the slamming of the door meant someone was stirring.       And that is a sound forever etched in my mind.        Back in the day, everywhere you went, that was the sound you heard and it was a homey, familiar sound. 

Another sound I loved to hear was the sound of the mules with all their tack on and hitched up to the wagon, coming down off the hill.        I would love to hear that sound one more time in my life, but that is impossible.       All I can do is try to remember it in my mind.        There was no other sound quite like it.      It was a very distinct sound.       When you heard it, there was no doubt as to what it was.    Hearing the jangle of all the brass  attached to all the leather that made up the harnesses and then attached to the wagon and the rumble of the wagon wheels on the gravel road, picture in your mind some scene from a western show or movie of some kind.      Those are sounds and even the sights that may have been very similar.       But, when we heard the wagon coming off the hill, we knew that Mamaw and Papaw were, more than likely, going down to Jesse's store to get a few necessities for themselves and to also pick up a wagon load of feed for the animals.        If my brothers and I got to go with them, I always asked them to pick out pretty feed sacks because I wanted pretty clothes made from them.       I didn't get a lot of their feed sacks, but I did get a few and Mom would make me shorts and tops from them most of the time.

Their house sat at the top of the hill.      While it wasn't a huge house, it was a 2 story house.        As a child going up the hill, it looked to be a really big house, kinda like an antebellum house, but it was FAR from that.        The driveway came up the center of the front yard and made a circle and then back down the hill.        Think of the eye of a needle, that's what their driveway was.       With a large cedar pole, from a VERY large cedar tree making the lamp post in the center of the eye of the needle.       If you was setting on the front porch, you had a bullseye view of the driveway.        You could see a head bob up and down while walking in the distance long before they got to the house.        If someone was in a vehicle, you could hear it long before the vehicle got in sight.       Papaw made a "no agents allowed" sign many years before I came along and nailed it to a tree at the bottom of the hill close to the road.       If he wasn't expecting anyone, or if it was a vehicle he didn't recognize, he might get up and get his shotgun and have it sitting pretty close by.       At any rate, he had it and would have used it if necessary.       Fortunately, he never did.   hahaha

They never had a modern vehicle of any kind.      No tractor.        Everything that was done, was done the hard way, but when tractors started becoming popular, he would hire someone to come and break up a field or something or someone might just do it being neighborly.      At any rate, it would save many back breaking hours for him.       But he never felt the need to get one for himself.       He would have had to learn to drive a tractor, but he already knew how to drive his prize team of mules.

Speaking of vehicles coming up the hill to their place, one of the things that we all waited for was the spring of the year when Mamaw would order her new chicks.       Always 2 or 3 boxes of little chicks would be ordered and the mail carrier would deliver them.        Mr. Gilliam would always take them up the hill to her and we, as kids, were so excited about it.       We couldn't wait to get to see those new chicks.       It was so fun!!!       All those hopping little fur balls, they didn't have true feathers yet, just that baby pin feathers, more like fur than feathers, and they were the cutest things.      I always loved that time of the year.      We knew that later on in the year would be time to put the older chickens in the freezers.       That was one heck of a time, doing all that.       But it also meant that we all would eat well, because we had them in freezers.

At one time, Papaw had a small tobacco patch.       I don't remember a lot about the growing process, but I do remember all of us being up there, out by the pond and using the mules to haul water from the pond to the tobacco patch on a small flat bed runner wagon that he had built just for that purpose.    when they was in the process of setting the tobacco plants.       I also remember tobacco stripping time, everyone smelled of tobacco.       It wasn't an unpleasant smell, just something we didn't smell all the time.        I guess that may be where my brothers cut their teeth on learning to be good farm hands and learning how to do things as instructed by an adult.      Because all 5 of them grew to be the best farm hands that any of the local farmers had ever hired and great men in general. 

I remember a lot of time being spent sitting on the front porch with Mamaw and Papaw after the chores were done.       I loved the times of sitting on the porch.       It was a time that the young people got to listen and learn from the older people who had lived good hard lives and soak up a little wisdom.    Sometimes there would be a lot of talking and other times there wasn't, but at the end of the day they knew they had fulfilled the mission for the day and felt very accomplished for doing it.  
  
In the early summer, the mornings were filled with lots of dew that had collected overnight and everything would be wet.      That was the best mornings to go blackberry picking.       Because we layered up with clothes to keep chiggers off us, and that made us hot.       Most of the time we looked rather funny, more like we were dressed for the dead of winter, with our socks pulled up over our pants legs.        Probably coal oil rubbed around our ankles and wrists to keep chiggers off our skin.    We not only looked funny, but we smelled a little funny too.      hahaha       So when everything was full of dew, our clothes soaked up the dew and that cooled us off.        If you didn't dress for success when picking blackberries, you would pay dearly!!       Maybe at least one chigger per blackberry.        Sometimes 2 chiggers per blackberry!!!       hahaha      That's a little bit of an exaggeration, but chiggers was a big deal and you wanted to avoid them at all costs!!!

I grew up in a day and time where, if you ate meat, more than likely "you" killed it beforehand.       My grandparents would butcher a hog.        That's where a LOT of their meat for the year would come from.        My mother and older brothers would help them with the butchering process.       They rendered their own lard and it was good.       The rendering process left what was called "cracklings".    It was the thick hide of the hog with fat on it and when they rendered the fat out, and it was thick, tough and chewy.      A favorite to make with cracklings was crackling cornbread.       Oh boy, was that ever good!!!!        Not only would we kill a hog, but my brothers also deer hunted.      So we would have deer meat.       Rabbit, squirrel, quail, fish, turtle as well as beef was among some of the foods that we was raised on and we knew how to dress the meat in order to put it in the freezer and eat throughout the year.        Those are lessons that never ever hurt a child to learn and know!!!        You are more appreciative of the food you eat if you have time invested in it.       Every child knew where their food came from, because more than likely they seen it butchered and cut up.       By the time a boy was six or seven years old, he was going out in the woods with the older ones.       He was learning how to hunt meat.        When the young girls were of the same age, more than likely, they were in the kitchen helping their Mom and seeing how she prepared the food that had just been butchered.      There was absolutely NOTHING wrong with that way of life!!!!        That's what everyone did.       If you ate meat, you killed it!!!        When you come from a large family, it took a lot of meat.       Heck, it took a lot of everything!!       hahaha   Just sayin'.       Now days, all that the kids and most adults know, is that their food comes from the grocery store. 

As a matter fact, I heard an "ignorant woman" (best words I can use without saying bad words)  trying to make a point against hunting and wanting to take guns from the law abiding citizens say that there is no reason for anyone to have guns or to ever have to kill an animal for food when all you have to do is go to the grocery store and get meat!!!        She was honest and truly trying to make a point that meat that comes from the store wasn't killed!!!       Yes, that truly is the point she was trying to make!!!!      I would loved to have told her to go ask a grandparent where their meat came from and ask her parents about the meat that they ate.        Some people are beyond help and beyond understanding reasonable thought.       Some people are dumber than a rock and they can't help it or they chose not to help it.     I don't know. 

That is some of the ignorance that makes me long for the days when the average person could think for themselves and didn't need biased news media or biased politicians or biased people pushing their own agendas telling them how to think.        People used to have common sense.        People used to know how to feed their families.         People used to know how to love their neighbors.        People used to have respect for what the bible says about sin.       People used to have respect for this country.       People in the past have sacrificed for their country.        People used to have respect for a man or woman in uniform or for those that had worn the uniform of any branch of the United States Military.    People used to have respect for human life.        Real women would have attacked anyone wanting to kill a baby in the birth canal!!!!         The females that we have seen, as of late, wearing white are not even qualified to be called females in my humble opinion.        I have called them witches in social media and I stand behind that well enough to keep calling them witches.        As a matter of fact, "evil witches" is what I have called them and I still do!!!         There is absolutely nothing about their gender that defines me in any way, shape, form or fashion.        There is truly something WRONG with these animals!!!        They have sold themselves out to the devil and we are seeing what that looks like.

We also see men wanting to be women and women wanting to be men.       And they are taking the steps necessary to change their gender.        Whatever those steps are.         I never thought I would ever live to see such days.       I am serious about that.         I remember when sin was treated as such, but now, we promote sin, we encourage sin, and we salute sin.        Two men living as husband and husband is not a marriage, it's sin.        Two women living together as wife and wife is not a marriage, it's sin.    You know what, this is what God declared many years ago when He spoke the universe into being and set out to design what the family should look like.       So, this is not what I think, it's what God thinks.    I don't want anyone to give 2 hoots about what I think, because what I think matters to no one!!!       But I do want you to care what the God of all creation thinks and He has said that there are some things that He has declared as sin.       I can not and will not speak otherwise.       If I spoke against God, it would be down right sin and I will not purposefully sin against God.       Yes, I sin every day, I repent and seek forgiveness every day.       I do not want to mislead anyone with what I say, that's why I make sure to try and not tell you what I think, but share with you what God has said.

So, when I think of the present day in which I live, I truly long for days when kids could just be kids, men were men and women were women and proud to be exactly as God made them.        The days when people was respectful to each other.       The days when children were treated as such.      When children was respectful to the adults around them.       When children was actually disciplined.       When parents parented and the government expected parents to parent.       When drunks were called drunks and drug addicts were called drug addicts, not victims of society.       When people actually worked for what they had.       When handouts wasn't a way of life.       When "being entitled" meant that you had WORKED HARD for what you got, meaning that working hard is what "entitled" you to the paycheck or social security or medicare that you was to get.     That is what entitlement IS!!!!!! 

Entitlement is NOT a free handout!!!!       But, if you come across the border illegally, then you can get whatever the United States Government has in the way of handouts, free, just for coming across the border!!!!!      There is something wrong with that!!!!       When honest, hard-working men and women have worked hard their whole lives and paid their fair share of taxes into this system and they are denied disability, when in fact they are disabled, that my friends, is a diabolical disgrace!!!!      Lord, I long for the days when people had enough active brain cells to tell right from wrong. 

Freedom is NOT free!!!     The sad state of the matter is that there are not enough people willing to fight for their freedom.       As a matter of fact, these people are working hard at handing their freedom over to someone else, anyone else, on a silver platter, free of charge, and not even trying to retain even a little bit of freedom.       I never ever thought I would live long enough to witness as much stupidity in high levels of authority as we have today.       I never ever thought I would live to see the people turn our land over to the muslims so easily!!!       Remember 911, I do!     I never thought I would live long enough to see govt officials cower down to CHILDREN!!!!!!       What in heck is wrong with people!!!!!

Lord, I long for the days of common sense!!!      I long for the days in which people thought for themselves.       I long for the days in which you didn't have to worry about offending people so easily.  I long for the days that people recognized sin as sin, instead of an alternative lifestyle.      I long for front porch chats.         I long for visiting friends in person.         I long for children chasing fireflies instead of being chastised for catching them.         I long for the days that you would see kids out picking blackberries.        I long for the days of collecting eggs in aprons.        I long for the day in which you didn't wonder if you was looking at a man or a woman.         I long for the days of seeing generations working side by side in the garden.         I long for the days when you would see teenage boys out working for the farmers.       That's where a lot of boys grew to be trustworthy men!!!!        I long to see men being men and women being women and seeing both men and women accepting their responsibility as parents.       I long for common sense to make a return.

This is just some of things that I long for.       I realize that common sense will not be coming back around any time soon and if it does try to make a comeback, I'm sure that it will be taken out swiftly.     I don't know if there is anything left worth fighting for.      I don't know if there is anyone left that would be willing to fight if we do deem something worth fighting for.      I just know for sure that we have handed everything that our forefathers have fought and died for over to a generation of ingrates and an influx of illegal aliens.      By the time these animals are done, there will be nothing left worth reminiscing about.   

If this sounds depressing, let me say that "it is depressing".        The days in which I live are depressing and the days in which you live are no less depressing.       Prayer is our only recourse.       Not only for ourselves, but for this country, for the leaders of this country and for anyone who actually cares about this country anymore.       We have more politicians in office that are working hard from the inside to destroy this country than there are those who are trying to save this country.      Lord help those who are trying to save this country.        From my pitiful point of view, it's time to clean house!!!!        Insanity has been described as doing the same thing over and over and expecting a different outcome.        We are living in insane times with insane people making decisions beneficial to themselves, instead of benefiting the people who put them in office.        Voting themselves big raises and bettering their insurance programs all the while the working poor get poorer and their insurance is laughable.        If I let myself go, I could really tell y'all about what's happening, but I try to refrain from foul words and potty mouth.        But needless to say, I am ticked off about what's happening in our country.

That's why I long for some of the days back when I was kid and I knew that adults had everything under control.       I could go to bed each night and know that whatever happened, Momma and Daddy was gonna take care of us.       Now, we have parents murdering babies in the birth canal.        Abortion has become this countries great holocaust and it only gets worse.       Because no one cares about the babies.       Animals have a higher regard in this country than an actual human baby!!!        Abortion has become the modern day sacrifice to the devil.        Abortion has become the coverup for fornication, the coverup for cheating on one's spouse, abortion has become the coverup for a lot of bad behavior and apparently, people want to continue to kill the children that had nothing to do with it in the first place.    The best I can say, "hell keeps getting hotter every day"!!   

The thing of it is this, not a single sin that I have mentioned is unforgivable.      Not a one.       But repentance is a word that people are bound and determined NOT to have anything to do with.       I don't even know if the word repentance is a viable word these days because we never hear it used.      The act of repentance is all it takes for the shed blood of Jesus to cover those sins.       But that IS what it takes.    Nothing else will suffice!!!       Repentance is an ugly word in most people's mind.       But that's the only way to get out of this mess, is repentance.       Those of us who are Christians need to repent for our complacency and then we need to pray for others to repent.       If ever there was a time that people need to repent, it is now.       I pray that people will come to the Lord and that other people will come "back" to Lord.        This country needs some serious healing, and it will only come with  repentance and turning to Jesus Christ.

Lord, I pray that you show me the error of my ways.      I pray that You will show us all the error of our ways before it's too late.       I pray that You will give common sense and wisdom and knowledge to those actively seeking it.       I pray that You will bless those who are at the forefront of the battle, fighting for this country.       I pray that You will stop those who are dead set on destroying this country.    Focus our hearts and minds on You and what You desire for us.      Forgive us for not seeking You when we know that You are our only salvation.       Help us to arise from the sleep and daze that we are in and see clearly what You have for us.       Show us directly, with no doubt, the things that are sin and the things that displease You.       Forgive us for not trusting You.       Thank You for what You are going to do, in the name of Jesus!   Amen

So, as I re-read this, I realize that I "keep" going back to a time that made sense.      I keep going back to a time when people cared about others.      I keep longing for the days when, even if you didn't go to church, you had respect for those who did.       You know, we have never had a time in this country when someone wasn't in need of some of the basics of life.       But it used to be that if you knew someone was in need, you helped them while allowing  them to maintain a little bit of their dignity.    Those days are gone.      But, I can't help it, I keep longing for those days.      Since we live in a time where some people are profiting from evil, it's gonna be hard to change the outcome.       We have tolerated way too much for the sake of not offending someone!!!!        Well, I'm offended at that and it's time to repent and have some courageous faith that God can change the evil winds that are sweeping across this country.       We either fight for good or we fight for evil, either way we are in a battle.      Our battle starts in our circle of influence, right where we live.       You/I/we do have influence and we need to remember that.      If we have Christ as our shield, we can stand up and make a difference.       It's up to us to repent and ask Christ to go before us.
  
So........we reminisce, we repent and we keep moving forward, in the name of Jesus Christ.       Repent and serve the Lord right where you are, make a difference for Christ. 

if this sounds harsh, I make no apologies for it.         at the end of the day, I lay my head on my pillow with what I believe and my opinions are the only ones that matter to me, other God's opinion.       if you have something to say about my opinions, then show me what doesn't line up with the Word of God.     I'm always seeking Him in all my thought processes and when he convicts me of sinful thoughts, I repent and ask Him to show me His truth.        He is faithful all the time.         He is right and holy and good.          Us, not so much.
